- Overall management of the pastry team operation for both concepts with the pastry chef
- Assist in creation and development of dessert menus and recipes
- Handle schedules and hours of the team
- Hire and train the team to uphold company policies and standards
- Manage all food costing including ordering, deliveries and inventory within the budget limitations
- Maintain and ensure compliances with all regulations of New York City's health and safety protocol
- Work with the Executive Chef/CDC to create a centralized kitchen
- Open-availability including all major holidays
- 3+ years of having fine-dining, preferably Michelin-rated, management experience of a pastry team
- A genuine passion and knowledge for food and pastries
- knowledge and appreciation of Korean cuisine and seasonal cuisine is a plus
- A strong sense of urgency and strong communication skill
- Able to take constructive criticism, learn quickly, and constantly improve

We are looking for an Pastry Sous Chef to lead both new projects.
Gui/Hwaro (opening in early 2024), is a new concept by Sungchul Shim and the team behind Michelin starred Kochi and Mari.
Hwaro is a chef's table dining concept located inside the soon to open Korean-steakhouse Gui. Hwaro will offer a fine-dining, counterside-open kitchen tasting menu highlighting exquisite and upscale ingredients throughout the meal.
Gui is an American-Korean Steakhouse (not a K-BBQ) with flavors influenced by diverse cultures of NYC. A menu created by chefs with a Korean heritage, American upbringing, and Global flavor understanding.
