    The Sous Chef is responsible for managing a specific department and collaborating with the Chef de Cuisine/Executive Chef to establish and uphold quality standards. At times, they may need to oversee the entire operation in the absence of the Chef de Cuisine or Executive Chef. The ideal Sous Chef ensures the smooth daily operations of the culinary department, provides guidance to the culinary team, and contributes to a positive guest experience.

    What you'll be doing in this role...

    • Assisting the Executive Chef in overseeing all culinary operations onboard, including menu planning, food preparation, and service
    • Supervising kitchen operations to guarantee the highest quality and presentation of all dishes
    • Collaborating with the Executive Chef to develop innovative menus that cater to diverse guests
    • Managing food costs and inventory efficiently to reduce waste
    • Training and motivating chefs and kitchen staff to maintain food preparation standards
    • Ensuring a safe and clean workplace following food safety guidelines
    • Working closely with other department heads to ensure an exceptional guest experience
    • Staying updated on industry trends and implementing new ideas to enhance culinary offerings
    • Prioritizing daily tasks with fellow Chefs and Stages
    • Overseeing the organized and timely completion of tasks in the restaurant
    • Ensuring consistent food preparation according to set standards
    • Maintaining a clean and safe work environment
    • Attending scheduled meetings and contributing to team ideation sessions

    In an ideal world, you have:

    • Experience in a Michelin-starred restaurant
    • Expertise in Mexican Cuisine
    • Minimum 5 years of fine dining and culinary experience
    • Passion for delivering exceptional guest experiences
    • High organization and motivation to manage multiple tasks efficiently
    • Ability to communicate effectively and prioritize quality
    • Commitment to continuous professional growth
    • Basic math and computer skills
    • Physical stamina and dexterity to meet job requirements

    ENVIRONMENTAL AND/OR PHYSICAL REQUIREMENTS

    • Consistent performance of essential job functions following safety standards
    • Ability to lift up to 50 pounds
    • Capability to maneuver through work areas and perform physical tasks
