Ridgemoor Country Club (RCC), situated in the Village of Harwood Heights neighborhood within Chicago, Illinois, is seeking a talented individual to join their team as the Executive Chef. As the Executive Chef, you will oversee the culinary operations at RCC, managing dining experiences at the 19th Hole, the 19th Hole Patio, and Pool Pavilion, as well as food production for Banquets, Club Events, the Snack Shop, and Halfway House.
RCC is a beloved haven for its predominantly city-dwelling members, offering a wide array of programs and amenities, making it a lively and family-centric destination during the warmer months.
Key Club Statistics:
· Achieved a total Club revenue of $8.7 million.
· $1.3 million food revenue and $1 million bar revenue.
· Food revenue breakdown: 49% a la carte, 21% Club events, and 30% banquets.
· Maintains a 39% overall food cost with a seasonal kitchen staff of 20.
· Boasts a membership of 410 individuals, with 260 full members and 348 members with golfing privileges.
· Peak seasons are May to October and December.
Role Overview:
Lead the culinary team across all Club outlets, ensuring top-tier food quality and sanitation standards. You will be responsible for menu development, procuring culinary supplies, and supervising kitchen staff while adhering to budgetary constraints.
