The property is located across the street from the original Statehouse in Little Rock.     *One Eleven at the Capital and the Capital Bar & Grill, prides itself on providing the best dining experiences for its guests. The Capital Bar & Grill has been recognized as a favorite watering hole for local political and business leaders, and allows the culinary team to showcase its unique approach to Southern comfort food. The Bar continues its tradition of hand-crafted cocktails complemented by its selection of craft beers and the Sommelier's personally selected wines.*

    *The Capital Hotel has been regarded as amongst the best small meeting hotels in the United States. It offers five meeting rooms, each with its own kitchen to ensure premier restaurant quality meal service to our guests. Each room is set up with customizable lighting and audio visual equipment; total conference space is six thousand square feet, with the largest room being equipped to seat 120 people in a meal configuration.*

    *Concord Hospitality a leader in hospitality in both lodging and food & beverage is currently seeking a talented Executive Chef to lead a passionate culinary team at our Four Star AAA Four Diamond historic hotel in Little Rock, AR.*

    *The Executive Chef for The Capital will oversee two state of the art kitchens, providing elevated dining experiences to our guests.*

    *Directly supervises the culinary department heads, including the Executive Sous Chef, Pastry Chef, and Banquet Chef and approximately 30 employees. Responsible for the overall management and operations of all food and beverage outlets and events at the hotel. This role is responsible for ensuring the highest standards and consistency of food handling, quality and presentation.*

    *Responsibilities include:*

    *Planning, assigning, monitoring, and approving work*

    *Interviewing, selecting, and hiring employees and culinary interns*

    *Training, developing and mentoring employees and culinary interns*

    *Appraising performance and rewarding and disciplining employees*

    *Responsible for all food production at each outlet. Conducts regular inspections of each outlet to observe the quality of food preparation and service areas, food appearance, and portion control. Tests food by tasting and smelling them.*

    *Ensures food production deadlines are met based on production orders.*

    *Ensures all outlets are clean and sanitary and in compliance with Health Department, ServSafe and safety (e.g., HACCP, OSHA) requirements.*

    *Oversees and coordinates the food planning, production, and execution of all events and catering functions.*

    *Approves the requisition of products, supplies, and equipment.*

    *Establishes controls to minimize food and labor costs. Watches labor costs daily to ensure efficiency in scheduling.*

    *Attends all required staff and executive committee meetings to discuss upcoming business, changes, forecasts, etc.*

    *Facilitates and attends employee meetings.*

    *Consults with management team on a regular basis regarding changes in business, staffing levels, and other department-related matters.*

    *Prepares annual department budget. Monitors expenses to keep within budgeted guidelines.*

    *Estimates, maintains, and reports food consumption, purchases and inventory records.*

    *Maintains time and payroll records and approves time off.*

    *Reviews, develops, and implements seasonal and yearly menus for all outlets. Analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu items.*

    Supports the team as needed by expediting for breakfast, lunch and dinner service.

    *Observes and collaborates with front of house management and servers on service times, correct food orders, food quality and guest feedback.*

    ***EDUCATION AND EXPERIENCE:***

    *High School Diploma or equivalent*

    *Two year culinary degree from an accredited institution and/or a 2 year culinary apprenticeship*

    *Must obtain valid ServSafe Certification*

    *Valid food handler's permit*

    *State and Local food handler requirements*

    *8 years of experience in a professional kitchen*

    *CPR certification*

    *Minimum 5 years' experience in 4 or 5 diamond or 4 or 5 star hotel or restaurant.*

    ***SKILLS & ABILITIES:***

    *Excellent organizational and time management skills*

    *Excellent verbal and written communication skills*

    *Customer Service skills interacting with guests and co-workers*

    *Ability to calculate figures and amounts, such as recipe yields, serving size, and weight and temperature conversion (grams to ounces, Celsius to Fahrenheit)*

    *Proficient computer and Microsoft Office skills*

    *Pay Range: $99, $119,546.73*
