As a line cook, here is what you will be doing :

Comply with all portion sizes, quality standards, department rules, policies and procedures Learn menu and makes prep lists for each shift/station

Identify and selects cuts of meat, poultry, shellfish, fish, game or vegetables used for frying or sauteing.

Portions and prepares items for frying, sauteing, broiling, grilling and roasting

Prepares pan sauces and garnishes as appropriate.

Ability to be creative with specials and discuss with Chef and Kitchen Supervisor.

Roasts and carves, broils, grills, sautes, and plates meats, poultry, shellfish, fish, game or vegetable along with appropriate garnish.

Maintain a sanitary workstation.

Select and uses knives, hand tools, utensils and equipment to portion, cut, slice, dip, batter, bread, whip, beat, maintain holding temperature, fry, saute or otherwise produce food in the fry/saute station.
This is a full- time position requiring availability on weekends and some holidays. Looking for individuals with 2-3 years restaurant/hotel kitchen experience.
