As a line cook, here is what you will be doing : - Comply with all portion sizes, quality standards, department rules, policies and procedures Learn menu and makes prep lists for each shift/station
- Identify and selects cuts of meat, poultry, shellfish, fish, game or vegetables used for frying or sauteing.
- Portions and prepares items for frying, sauteing, broiling, grilling and roasting
- Prepares pan sauces and garnishes as appropriate.
- Ability to be creative with specials and discuss with Chef and Kitchen Supervisor.
- Roasts and carves, broils, grills, sautes, and plates meats, poultry, shellfish, fish, game or vegetable along with appropriate garnish.
- Maintain a sanitary workstation.
- Select and uses knives, hand tools, utensils and equipment to portion, cut, slice, dip, batter, bread, whip, beat, maintain holding temperature, fry, saute or otherwise produce food in the fry/saute station.
This is a full- time position requiring availability on weekends and some holidays. Looking for individuals with 2-3 years restaurant/hotel kitchen experience.
