    Position Title:

    Culinary Director of Senior Dining

    Status:

    Full Time

    Compensation:

    Reports To:

    VP of Food Services

    Job Summary:

    Perform all food operational responsibilities for Senior Meal Program. Coordinate entire Senior Meal program ordering, accounting, prep, pack-out and delivery.

    Job Qualifications:

    Completion of a two year Hotel/Restaurant Associates Degree program or equivalent on-hands experience is desirable.

    One year experience in a cook's capacity is preferred.

    Must be able to meet production schedules on a timely basis.

    Knowledge of therapeutic diets is essential.

    Serve Safe Certified.

    Reading and verbal communication skills are essential.

    Computer training in Excel and labeling systems is essential.

    Physical Qualifications:

    May require lifting up to 50 pounds, bending, standing, walking, pushing, pulling and execution.

    Job Responsibilities:

    Responsible for the preparation of any Senior Meal program activity.

    Ability to be hands on, assist the team with prep, cooking and portioning if needed.

    Responsible for all production schedules being met on a timely basis.

    Establish menu and financial forecasts based on current business and previous experience.

    Complete all billing and accounting functions.

    Verify that all portion sizes, quality standards, department rules, policies and procedures are maintained.

    Verify that all sanitation and nutrition practices are maintained.

    Establish a record of visits to each meal site.

    Attend all menu meetings with Milwaukee County.
