    Summary:

    Under the general direction of the Facilities Administrator. This position is responsible for the planning, direction, and operation of a complex centralized food service program for detainees.

    *Please Note: This position is contingent upon a contract award. We will not be actively responding to applicants until there is a need to move forward with this position.

    Essential Duties and Responsibilities: (including but not limited to)
    • Prepare budget estimates and ensure Food Service operates within established budgetary guidelines.
    • Follow company procedures, purchases all food, equipment, and supplies for food service department and ensures adequate supplies are in stock.
    • Works directly with registered dietician to create and update 35-day cycle menus that meet all dietary requirements for regular, vegetarian, and all medical diets.
    • Prepare and maintains records, reports and statements concerning all operations of food service department.
    • Provide deliverable to COR in accordance with the contract.
    • Work with Quality Control to ensure compliance with contract, county, State and Federal laws, ACA, and PBNDS.
    • Direct and oversee new hire and in-service education and training program for food service staff.
    • Supervise, direct, and schedule department staffing.
    • Make recommendations to the Facilities Administrator on staffing, promotions, discipline, and purchasing.
    • Implement detainee / inmate training program in the food service area.
    • Prepares and submits reports in functional areas on time and accurately.
    • Responsible for maintaining the food inventory program.
    • Develop and sustain Emergency Contingency plans and trains staff accordingly.
    • Coordinates with pest control to ensure the kitchen area and its surroundings are free of pest and rodents by sustaining a pest control program.
    • Establish and maintain a cleaning schedule, which provides for the most thorough cleaning of the kitchen facilities within the time frames allotted.
    • Train Staff, Detainees & Inmates on kitchen Operation standards.
    • Polices and sustains facility Chemical, Key, Knife, and Tool Control procedures.
    • Maintains Company and Government equipment in working order at all times.
    • Ensure that the detainee/inmates therapeutic and or religious diets are being made in compliance as set forth by Chaplain and or clinical director.
    • Manage purchasing and ordering to ensure that food cost is within budgetary requirements.
    • Perform other duties as assigned.
    Minimum Qualifications:
    • High School Graduate or GED
    • Minimum of five years experience at supervisory or management level in large quantity cooking in an institution, military, large commercial kitchen, or similar setting which has developed skills in measuring and mixing ingredients according to recipes and number of persons to be served. (Large quantity: cooking for a minimum of 500 people, mixing ingredients from scratch using recipes). Must have experience in purchasing and have experience training and evaluating staff.
    • Valid Driver's License with clean driving record, able to drive company vehicle
    Preferred Qualifications:
    • Two (2) years of experience as an Assistant Food Service Manager within a detention facility, jail, or prison
    • Associate degree in culinary or related field
    • Proficiency in Microsoft Office Suite
    Supervision:

    This position is responsible for supervising all food service employees.

    Working Environment:

    The work environment characteristics described in this job description are representative of those an employee encounters while performing the essential duties and responsibilities of this job. Work is performed in an office environment, may be subject to temperature and noise level changes.

    Works in a busy kitchen environment; however, work areas may include all areas of the secured facility. Works where slips & trips may occur frequently and often exposed to sharp objects. Exposure to blood borne pathogens.

    Physical Demands (including but not limited to):
    • May be required to bend and stoop frequently and occasionally kneel or crouch. Often climbs stairs and works with arms above the shoulder.
    • May be required to move heavy equipment.
    • Required to lift 50 lbs or less frequently and often lifts 50-65 lbs.
    • May often be required to grip, squeeze and repetitively use fine hand movements.

    Work Schedule:Monday-Friday 8:00a.m.-5:00 p.m. or as needs dictate
