    Description
    Summary:

    Works under the general direction of the Food Service Manager. This position is a full assistant to the Food Service Manager and responsible for the institution's Food Service operations during the administrator's absence.

    *Please Note: This position is contingent upon a contract award. We will not be actively responding to applicants until there is a need to move forward with this position.

    Essential Duties and Responsibilities: (including but not limited to)
    • Supervise all kitchen supervisors and staff personnel.
    • Ensure that proper inventory levels are maintained.
    • Ensure that approved menu is being adhered too.
    • Ensure that sanitation of the exterior and interior of kitchen is being maintained at all times by developing and training staff, detainees and or inmates.
    • Maintain security by ensuring that staff is following key, chemical & tool control procedures as outline by correctional standards.
    • Maintain staffing levels as contractually and or mandated by the contract in order to sustain an ongoing operation.
    • Ensure that the detainee/inmates therapeutic and or religious diets are being made in compliance as set forth by Chaplain and or clinical director.
    • Ensure staff, detainee and or inmates are working in a safe environment by ensuring that OSHA, facility, and corporate safety standards are being adhered to.
    • Maintain food safe by making sure that staff is working by Servsafe standards.
    • Ensure all contractual obligations are being adhered to.
    • Engage in training, professional development, evaluating, and discipline all kitchen working staff.
    • Make recommendations to the Food Service Manager on staff related issues.
    • Implement and document detainee training programs for the food service department.
    • Will assumes the Food Service Manager's position in his absence.
    • Prepare and submit kitchen reports on time and accurately.
    • Support the Safety and Quality Control programs.
    • Recommend changes in kitchen policies and procedures.
    • Prepare and review reports, required paperwork, and deliverable.
    • Will assist on the production floor during peak hours, or when short of manpower.
    • Perform other duties as required.
    Minimum Qualifications:
    • High School Graduate or GED
    • At least three (3) years experience at supervisory or management level in large quantity cooking in an institution, military, large commercial kitchen, or similar setting which has developed skills in measuring and mixing ingredients according to recipes and number of persons to be served. (Large quantity: cooking for a minimum of 500 people, mixing ingredients from scratch using recipes). Must have experience in purchasing and have experience training and evaluating staff.
    • Two (2) years experience as a Cook II or Cook Supervisor within a detention facility, jail, or prison
    • Valid Driver's License with clean driving record, able to drive company vehicle
    • To obtain and maintain a favorable determination from a US government background screening.
    Preferred Qualifications:
    • Associate degree in culinary or related field
    • Proficiency in Spanish language.
    • Proficiency in Microsoft Office Suite
    Supervision:

    This position is responsible for supervising all food service employees.

    Working Environment:

    The work environment characteristics described in this job description are representative of those an employee encounters while performing the essential duties and responsibilities of this job. Work is performed in an office environment, may be subject to temperature and noise level changes.

    Works in a busy kitchen environment; however, work areas may include all areas of the secured facility. Overall demands of this position are moderate.

    Physical Demands (including but not limited to):
    • May be required to bend and stoop frequently and occasionally kneel or crouch. Often climbs stairs and works with arms above the shoulder.
    • May be required to move heavy equipment.
    • Required to lift 50 lbs or less frequently and often lifts 50-65 lbs.
    • May often be required to grip, squeeze and repetitively use fine hand movements.

    Work Schedule: Monday-Friday 8:00a.m.-5:00 p.m. or as needs dictate
