    Job Description and Duties

    Under the direction of the Correctional Health Services Administrator I/II, the Food Administrator I, CF plans, organizes, and directs all food service and dietary activities in a correctional facility health care program or may work under the direction of a Food Administrator II, CF in a large facility serving 3 meals per day to 500 or more residents. The Food Administrator I, CF collaborates with clinical personnel on nutrition assessments, needs, dietary interventions and strategies, and formulates dietary menus per clinical guidance. Additionally, the Food Administrator I, CF establishes, interprets, and implements standards and procedures regulating the food service department's operations; devises menus, calculates food requirements, and supervises the preparation and serving of food following the State food control system; assesses food facilities for adherence with sanitary, safety, and housekeeping regulations; and devises and conducts In-Service Training (IST) programs for food service staff. Ensures order, oversees inmate behavior, and upholds the well-being of individuals and property.

    Minimum Qualifications

    Either I

    One year of experience in California state service executing the responsibilities of a Dietitian.

    Or IIExperience:

    One year of experience in a hospital as a dietitian, nutritionist, or food service manager, with oversight of a group of diet pantry employees. and

    Education: Corresponding to graduation from college and successful completion of an approved internship in institutional management or dietetics. (Association with the American Dietetic Association or eligibility for such membership can substitute for the obligatory internship.)

    Or IIIExperience:

    Three years of experience as a dietitian, nutritionist, or food service manager with supervision of a group of dietary unit employees, one year of which must have been under the guidance of a professionally trained dietitian. and

    Education: Corresponding to graduation from college with a Bachelor's Degree in Foods, Nutrition, or Institution Management.

    New candidates in CDCR or the Division of Juvenile Justice must undergo a background investigation process utilizing Live Scan Fingerprinting and Tuberculosis testing before appointment, followed by departmental annual Tuberculosis testing/evaluation thereafter.
