**Essential Duties and Responsibilities (Key Activities)**
Maintain complete knowledge of and comply with all departmental policies, service procedures and standards. Ensure that standards are maintained at a superior level on a daily basis. * Responsible for the Coordination of all aspects of the Restaurant and PDR functions, in accordance with hotel standards. Directs, implements and maintains a service and management philosophy which serves as a guide to respective associates.
Coordinate and performs a variety of administrative and operational duties associated with marketing, booking, and event coordination of food and beverage services
Provides administrative support to the culinary department ie preparing Purchase Orders, plating guide updates, updating HACCP file
Maintain complete knowledge of:
+ All liquor brands, beers and non-alcoholic selections available in restaurant.
+ The particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.
+ Designated glassware and garnishes for drinks.
+ All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
+ Dining room layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code.
+ P.O.S. and manual system procedures.
+ Daily housecount, arrivals/departures, V.I.P.'s.
+ Scheduled in-house group activities, locations and times.
+ Correct maintenance and use of equipment.
+ All department policies/service procedures.
Job Requirements **Required Skills **
General Skills: Must be able to perform job functions with attention to detail, speed and accuracy; prioritize, organize and follow-up; be a clear thinker, remaining calm and resolving problems using good judgment; follow directions thoroughly; understand a guests service needs; work cohesively with co-workers as part of a team; work with minimal supervision; maintain confidentiality of guest information and pertinent hotel data.
Technical Skills: Knowledge of various food service styles ; ability to satisfactorily communicate in English with guests, management and co-workers to their understanding; ability to compute basic mathematical calculations; familiarity with food and beverage cost controls; familiarity with point of sale systems.
Language: Required to speak, read and write English, with fluency in other languages preferred.
Physical Requirements: Must be able to exert physical effort in transporting 20 pounds, endure various physical movements throughout the work areas, reach up and down, remain stationary at times throughout work periods, and satisfactorily communicate with guests and co-workers to their understanding.
**Qualifications **
Education: High school diploma; some college.
Licenses & Certifications: Minimum 21 years of age to serve alcohol.
**Experience **
Experience: Minimum 1 year experience as an Management Trainee within a luxury or ultra-luxury restaurant.
