Description
Five Acres is Chef Greg Baxtrom's third restaurant in New York City. With this project, he is reimagining the Farm to Table concept in a gut-renovated Rockefeller Plaza space.

Open for breakfast, lunch and dinner, the seasonal menus will feature creative takes on some of Chef Baxtrom's key fine-dining recipes and techniques.

Opening is slated for Fall 2022.


RESPONSIBILITIES
As the Assistant General Manager, you will be responsible for leading and managing all aspects of the daily operations. You will manage the dining room and oversee all team members to ensure a positive guest experience.

In addition, you will be responsible for administrative and organizational functions with the goal of ensuring a smooth, successful, and profitable operation.

Additional responsibilities will include but are not limited to:

  • In conjunction with management, hire and train all team members
  • Provide continuous training and leadership to develop and professionally grow all staff members.
  • Hold employees accountable to all standards and practices, evaluating and/or following disciplinary procedures when necessary.
  • Work with GM to provide leadership and guidance to the management team by setting a positive example and establishing empathetic, professional accountability.
  • Assist with opening inventories of all operating supplies and smallwares
  • Assist with stocking and creating organizational systems in sidestations, storage rooms, bar, etc.
  • Assist with initial training programming and scheduling for all hourly employees
  • Post
- opening scheduling of FOH employees

  • Participate in meetings and offer constructive feedback to help propel the operation and team towards the "starting line", which will be the grand opening
  • Establish a positive morale and working environment through empathy, consistency, and competency in all interactions and assigned responsibilities
  • Guide Floor managers in verifying payroll on a daily basis
  • Accept and review purchases against PO's with appropriate team members
  • Assist in daily walkthroughs for R&M needs and DOH standards
  • Monitor reviews, acknowledge employees who receive positive recognition, assist with coaching when applicable for unfavorable reviews or feedback
  • Assist with building guest profiles in Resy, including media and F&B influencers
  • A least 4 years of progressive management experience in a high volume or michelin level environment. Past restaurant opening experience a plus
  • Exceptional communication skills, both written and verbal
  • A high degree of organizational focus and an interest in helping build out and consistently execute systems and SOP's
  • Extensive knowledge of the food and beverage industry
  • An ability to lead with empathy and remain calm under pressure
  • Ability to remain level headed in all situations
  • A strong capacity to prioritize in a fastpaced environment, and to make decisions that are in the best interest of the restaurant, our guests, and staff.
  • NYC DOH Food Protection Certification
  • Proficiency in, or ability to easily master, restaurant IT systems, including but not limited to: Toast, Tripleseat, MarginEdge, 7Shifts, Resy
