- Maintains excellent kitchen hygiene and sanitary conditions at all times.
- Monitors banquet kitchen responsibilities to ensure all tasks and assignments are completed timely and thoroughly.
- Assists with daily inventory.
- Administers breaks in a timely manner.

- Leads by creating an upbeat and positive, supportive work environment.
- Trains and cross trains those within the department while encouraging, reinforcing and supporting peers and team.
- Ensures cooking line is free of debris throughout shift.
- Adheres to all internal controls department policies, standards and procedures.
- Completes all pre-shift work and ensures that all stations after close/shift change follow the guidelines of the open/close checklists.
- Must practice EGE (everyone greets everyone)

- High School diploma or equivalent preferred.
- Previous experience in a food outlet required.
- Previous experience in a food preparation lead position preferred.
- Must be familiar with kitchen equipment and cooking techniques.
- Strong interpersonal and communication skills (oral and written) with an ability to read and follow recipes.
- Ability to exercise good judgment.
- Upbeat and positive attitude.
- Must be a team player, willingness to cross train/ assist in other areas.
- Ability to uphold and demonstrate the highest level of integrity in all situations and recognize standards required by a regulated business
- Must be able to work independently.
- Must be able to sit and/or stand for long periods of time (minimum of four hours).
- Demonstrates a sense of urgency while performing tasks and meeting deadlines.
- Must be able to maneuver throughout all areas of the casino; from floor to floor either by stairways (minimum of 20 steps) or escalator.
- Must be able to lift, carry and/or push a minimum of 40 lbs.
- Must be able to stoop, kneel, bend, twist, turn, push, pull, grasp objects and the manual dexterity to operate a computer and other necessary office equipment.
- Must be able to tolerate areas containing secondhand smoke, dust, loud noises and bright lights.
- Must be able to work varied shifts, weekends and holidays as needed.

Job DescriptionJOB SUMMARY:
Provides support and leadership for food and beverage employees in preparation, service, distribution and maintenance of the production kitchen. Assists in ordering products both food and non-food, assists in ensuring proper cooking procedures are being followed according to dept. standards, recipes, as well as Health Dept. guidelines. Assist in ensuring that proper inventory is taken. Supports all Lounge, and Banquet functions with regards to prepping, cooking, ordering, safety & sanitation, and any other standards set forth in dept. handbook. Lead assists in making sure that product is rotated properly, coolers are in proper order clean and odor free, and dry storage areas meet all Health dept standards. Lead will attend BEO meetings to ensure accuracy of guest request. Will oversee line level employees to ensure that food is presented and properly plated according to specifications. Will assist in running food, carving or any other function needed to ensure guest satisfaction.
