    **Position Highlights**

    The AZ Student Unions is looking for a talented Cook, Lead to work at our new Asian cuisine restaurant located at the Global Center on campus. This position will prepare, season and cook primarily Asian cuisine along with other dishes. As a Cook, Lead you will be expected to create great tasting food with food safety in focus. You will be preparing food in many different forms using a very unique combination of equipment. Supervises the work of others. In this position you may be required to work early mornings and/or late evening hours, including weekends.

    **Duties & Responsibilities**

    Prepares a complete selection of Asian dishes and other menu items for Asian concept at Global Center

    Reviews recipes and makes necessary changes to meet production requirements

    Checks for necessary product and reports shortages to Supervisors

    Has food items ready to meet posted operating schedule

    Checks products for safe cooking and holding temperatures and records temperatures on Food log

    Maintains fresh, high quality foods throughout the meal period by batch cooking as necessary

    Checks quality of all ingredients and tastes prepared food, adjusts seasoning and consistency as necessary

    Coordinates and places produce, meat, and fish order and communicates needs to warehouse Lead

    Checks walk-ins and freezer for proper product rotation to control product waste

    Confers with Supervisor/Lead on a daily basis regarding menu changes and reports any equipment malfunctions

    Ensures that par levels are kept up and products are rotated and quality is maintained at all times

    Communicates changes or specials with Entree Cook on a daily basis

    Advises cooks on proper method of preparation

    Additional duties as assigned by supervisor

    Utilizes Food Pro for recipes

    Writes all new recipes using standard dining services recipe form so they can be added to Food Pro.

    Keeps recipes updated so that they reflect actual ingredients and amounts used thus ensuring that they are priced accordingly and nutritionally accurate

    Yield tests recipes for accuracy

    Knowledge, Skills and Abilities:

    General knowledge of weights and measures

    Ability to communicate effectively

    Knowledge of food service operations including large quantity food preparation

    Skill in operating various institutional/commercial kitchen equipment

    Physical Requirements:

    Frequently reaches, lifts, shakes, stirs, pours, carries, and pushes

    Often withstand large workload under high heat

    Often stands during entire shift

    Must be able to occasionally transport/move a minimum of 40 pounds

    **Minimum Qualifications**

    High school diploma or equivalent. or equivalent learning attained through experience required

    Minimum of 3 years of relevant experience

    **Preferred Qualifications**

    5 or more years of previous experience cooking Asian cuisines

    Experience operating commercial food service equipment

    **FLSA:** Non-Exempt
