AT AT&T HOTEL AND CONFERENCE CENTER HOOK 'EM

Principle Responsibilities & Position Purpose:


Assist the Director of Food & Beverage in the foodservice operation at in the hotel and conference center with a focus on the PM shifts.


ESSENTIAL FUNCTIONS

  • Financially accountable for all food and beverage outlets
  • Assure that all outlets perform services according to Platinum Service especially the PM shift
  • Operates the department in accordance with the approved budget, while providing the Client with the maximum value for the dollars spent.
  • Ensures that the food offered to the client, customers, and employees of the operation is of superior quality.
  • Directs and conducts safety, sanitation, and maintenance programs.
  • Directs and coordinates training and training plans
  • Maintains excellent relationships with employees, guests and Client as well as other departments within the operation.
  • Able to handle responsibility for ensuring proper presentation, portion control, and maintenance of proper serving temperaturesfollows HACCP standards
  • Maintains close communication with the Food & Beverage Division and other department/division heads.
  • Will assist in developing annual budget and action plans, including annual objectives.
  • Reviews daily operating results and weekly forecasting and scheduling, taking immediate corrective action if required.
  • Maintains high visibility with associates and guests.
  • Conducts daily review of Food & Beverage Division hotel operations with Department Heads.
  • Will attend hotel operational meetings, Food & Beverage departmental meetings, and associaterelated events.
  • Reviews annual objectives composed by department heads and monitors progress to completion over coming year.
  • Monitors associate hires and disciplinary actions.
  • Mandatory adherence to the Platinum Service process on a daily basis. To include Platinum Service Standards, Great Elements of Customer Service, and the "To BE" Philosophy.

SUPPORTIVE FUNCTIONS

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by management based upon the particular requirements of the company.


OTHER DUTIES

Assimilate PLATINUM SERVICE culture into The AT&T Executive Education & Conference Center through understanding, supporting and participating in all elements of PLATINUM SERVICE.

Demonstrate working knowledge of the service standards.


Regular attendance in conformance with the standards, which may be established by Flik from time to time, is essential to the successful performance of this position.

SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation.


  • Extensive understanding and experience developing Menu Engineering reports
  • Extensive Food and Beverage costing experience to include yield management
  • Extensive understanding of Scheduling concepts
  • Extensive fine dining experience
  • Ability to analyze and develop labor models
  • Basic Property product knowledge, i.e., staffing, operations, safety, security, union rules, structural, terminology, fire, police and health codes, hotel policies, city ordinances.
  • Extensive knowledge of hotel structure and how all departments interact
  • Extensive knowledge of various types of set up styles used in the meeting rooms
  • Basic knowledge of audio visual equipment, telecom equipment, lighting and room temperature control
  • Extensive knowledge of banquet menus
  • Basic wine and beverage knowledge
  • Proven ability to increase revenues
  • Proven ability to decrease costs
  • Understanding of Texas liquor laws (TABC)
  • Proven ability to increase guest and employee satisfaction
  • Extensive knowledge of market and related meeting industry.
  • Ability to effectively deal with internal and external customers, some of whom will require high levels of patience, tact and diplomacy to diffuse anger, collect accurate information and resolve conflicts
  • Quantitative processing of data via office machine equipment, mathematical computations and analytical skills necessary to accurately determine and communicate financial, forecasting and space utilization calculations.
  • Extensive knowledge of Excel
  • Proficiency in the use and operation of computer systems with the ability to navigate efficiently through Word, Outlook, Delphi (or in house sales system), Market Vision, Internet and Intranet
