About the Role
- The Chocolate Sous Chef is responsible for successfully leading + executing production, both efficiently and to the Pot + Pan quality standard. This includes assisting in the research + development of new products, as well as the implementation of new products and processes, in collaboration with the Executive Chef.
- As both a cannabis business and a small business, this role requires a high level of adaptability to the ever changing landscape of a growing business and industry;
- Proactive communication to manage expectations of direct managers and team members is a must
- A positive + energetic attitude, as well as a passion + excitement for food + culinary innovation, is vital to being successful in this role.
This includes, but is not limited to:
- Successfully + efficiently producing Chocolate Department products, including the execution + implementation of new products in collaboration with the Executive Chef.
- Implementation of new processes + equipment, as well as proper tracking of new processes, and updates to current processes, in collaboration with the Executive Chef.
- Executing the proper training of production assistants within the Chocolate Department.
- Use of proper digital tracking tracking tools for the Chocolate Department, and utilize and update general manufacturing tools by all departments.
- Assisting Executive Chef in execution of products and projects for special events, R+D, marketing and/or content creation.
- The Chocolate Sous Chef is responsible for maintaining a level of respect and overall attitude that delivers on Pot + Pan's promise to be the best place to work.

- Create and develop edible products that are unique, compliant, and brand appropriate;
- Create and develop recipes for new products while balancing input from the Executive Chef, GM of Manufacturing and CEO.
- Identify and introduce new techniques in order to stay competitive in the THC edible market and intheknow with developing food trends;
- Final Quality Control for all products exiting Pot + Pan Manufacturing. This requires supervision, QC checks, and training of all Production team members on quality control;
- Receive sign off on all new and final products by Executive Chef, GM of Manufacturing and CEO.
- Assist in manufacturing of products in accordance with Pot + Pan standards;
- Follow all company policies and procedures with regard to safety, food safety, quality, sanitation and basic maintenance of equipment;
- Support styled shoots, videos, and seasonal content for the company;
- Partner with the Executive Chef on implementation of all automated processes to ensure quality standards are met and food/recipe processes are inline with industry or internal standards.
- Assist in the training of staff when implementing new processes, products, and automation;
- Perform duties related to preparation, manufacturing, and packaging of products;
- Follow production recipes + SOPs within each department
- Follow all company policies and procedures with regard to safety, food safety, quality control, sanitation, and basic maintenance of equipment and facility;
- Report any conditions that need attention to the appropriate supervisor;
- Ensure adherence to colocation SOPs;
- Ensure adherence to all state and city rules and regulations;
- Upholding quality control of all products to Pot + Pan standards
- Manage and track the processes of assigned projects + tasks through spreadsheets and (Electronic Record Keeping) ERP systems when applicable;
- Proper digital tracking and recording of production per SOPs;
- Communicate inventory needs
- Maintains detailed documentation of all processes, recipes, QC documentation, R+D processes and trials etc. for internal record keeping and references
- Maintain internal communication with team members, including leadership where appropriate
- Punctual;
- Appropriately prioritizes time for efficient execution of needs of the business
- Maintains work hours appropriately as dictated by business needs;
- Keeps R&D and Chocolate Departments clean and orderly
- Must be 21 years of age and pass a criminal background check required by the State of Maine.
