Wine/Service Manager - Land and Sea Dept at Chicago Athletic Association

Reports to:
General Manager, Beverage Director, Director of Operations


Position Objective:

Their primary focus is the oversight, training, and execution of wine programs, as well as daily operations and the communication with the various outlets.

This position also oversees hourly staff, sales and guest experience as an operations service manager. They will maintain the tone and culture as related to Land and Sea Dept.


Essential Duties and Responsibilities:


  • Maintain and develop existing wine lists, in line with budgeted beverage costs
  • Properly receive product and submit invoices for wine items using BinWise software
  • Perform regular and ad hoc inventories of wine, beverage, and restaurant supplies and track high cost items; place wine, beverage, and restaurant supply orders; and accept and inspect deliveries as needed
  • Run shifts and lead and direct the daily operations of the outlets
  • Organize, run, and supervise smooth and efficient preshifts, daily opening, and closing shifts, ensuring exceptional guest and employee experience
  • Help manage all employees, including assisting in training, support, performance management, coaching and development
  • Respond immediately and effectively to guest and employee needs and feedback
  • Use tact and good judgment when dealing with challenges pertaining to guests, vendors, and employees, and respond with patience and courtesy
  • Serve as a point of contact for private and semiprivate events hosts & wine offerings
  • Liaison between hotel property management and staff as needed
  • Review and maintain par levels of supplies and equipment
  • Assist GM & Bev. Dir. in managing costs, driving sales, and growing the business in support of financial goals and objectives
  • Work a variety of days and shifts (including early morning, late nights, weekends, and holidays) as needed
  • Maintain a safe and enjoyable work environment

This role requires the following certifications:

  • Level 1 (+) certification through the Court of Master Sommeliers, or equivalent certification and/or corresponding knowledge/experience
  • Food Manager
  • Allergen Training
  • Alcohol Server Training
  • May perform other duties as they are assigned
  • Must be able to lift 40 lbs and stand for extended periods of time

FLSA Status:
Non-Exempt

  • Land and Sea Dept. supports a healthy work life balance.
