Summary:Assist in maintaining and updating the Quality and HACCP (Hazard Analysis Critical Control Points)/Food Safety Programs and all relative food safety documents and issues for Stampede Culinary Partners.

This will need to be done by performing the following duties independently and/or with assistance and direction from manager and supervisors.

This will also involve working with the HACCP & Food Safety Manager, Sr. QA Manager/Supervisor and Food Safety and Regulatory Manager on customer complaints and label approvals.


Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Assist in reviewing and checking HACCP documents while performing daily food safety procedures.
  • Assists with handling food safety issues or concerns with paperwork or in the plant.
  • Assist the Food Safety Team with outside suppliers to assure they have provided the proper documents for approved and they are providing quality, wholesome and safe products.
  • Assist the FSQA Team and the production team with gathering information from the ovens and chilling steps from the Oak Lawn facility
  • Assist with maintaining food safety and quality assurance files and records.
  • Assist with completing Daily Preshipment signoffs when needed.
  • Assist with reviewing and verifying the QA Pre-Requisite paperwork for Preshipment review.
  • Works with FSQA Manager and the Quality Assurance Supervisor on all the various regulatory, GFSI and customer audits that are needed at the Illinois facilities.
  • Assist with reviewing, filling and/or pulling necessary preparatory work that is needed prior to BRC audit, customer audits and/or any other 3rd party audit.
  • Assist with keeping up the Supplier Approval program documents for Meat, Ingredient and Packaging Suppliers.
  • Fill in for Quality Assurance Technicians when needed.
  • Works on new Supplier Approval as needed.
  • Help print necessary Supplier documentation the different IL facilities.
  • Assist and fill in when needed to conduct quarterly testing for our Neogen allergen verification at
  • Assist with following up on and support the submittal of SARFs for environmental testing at Chicagoland locations, along with other micro testing which may be needed.
  • Assist the team with and/or participate in BRC Internal Audits and monthly facility audits.
  • Assists with SPIKE tracking of raw materials and entry in the SPIKE Tracking Report
  • Assists with mock recalls when they need to be performed.
  • Assists with temperature validations of outgoing deliveries to customers (temp trace).
  • Assist with and/or fillin to complete operational inspections by spending time on the production floor reviewing operations (outside of monthly audits) to look for opportunities and to continuously improve.
  • Assists with maintaining allergen product lists.
  • Assist Food Safety & Regulatory Manager and learn the function that are performed, to be available to help with metal detectors, Xrays, Canopy and Bizerba label machines.
  • Assists the team with gathering information as needed per customer request and/or complaints.
  • May need to work with QA and/or production employees in refrigerated areas and or freezers.
  • Assist with other tasks that may come up during the day but may not be listed here.

Supervisory Responsibilities
May be asked to indirectly help supervise employees for the Food Safety and QA Department. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws.

Education and/or Experience


At least two years of experience in the food industry preferred, relating to food safety, quality assurance and/or other food service experience.


Language Skills
Ability to respond to common inquiries or tasks asked of the individual by his/her supervisors. Ability to effectively present information to supervisors, management and/or top management.


Mathematical Skills

Reasoning Ability
Ability to define problems, collect data, establish facts, and draw valid conclusions.

Ability to interpret an extensive variety of technical instructions in mathematical or diagram form and deal with several abstract and concrete variables.
