QUALIFICATIONS:

  • Graduate of a Dietary Manager Program

DEPARTMENTAL RESPONSIBILITIES:

  • Directly supervising assigned staff, including participating in orientation, managing staff performance, and monitoring time and attendance
  • Reallocating dietary staff as needed to meet department and facility requirements
  • Scheduling and making necessary replacements
  • Enforcing and monitoring employee adherence to job duties and infection control procedures
  • Instructing production personnel and supervising staff dining room food service during meal hours
  • Assisting in the development of menus and preparing daily food production sheets
  • Overseeing proper and safe use of cleaning agents as per the facility's manual
  • Supervising daily food production, maintaining food sanitation standards and conducting preventative maintenance
  • Ensuring correct portioning methods are followed
  • Maintaining adherence to sanitation policies and procedures outlined by KHMC and the Director
  • Responsible for opening/closing rounds
  • Assisting tray line employees when necessary
  • Ensuring completion of food evaluation and temperature sheets daily
  • Providing food and supplies for catering and special food functions
  • Evaluating resident dietary requests according to nutritional protocols
  • Overseeing and maintaining refrigerator temperature log
  • Overseeing and maintaining dishwasher temperature log and pot washing sanitizing chemicals
