QUALIFICATIONS:
- Graduate of a Dietary Manager Program
DEPARTMENTAL RESPONSIBILITIES:
- Directly supervising assigned staff, including participating in orientation, managing staff performance, and monitoring time and attendance
- Reallocating dietary staff as needed to meet department and facility requirements
- Scheduling and making necessary replacements
- Enforcing and monitoring employee adherence to job duties and infection control procedures
- Instructing production personnel and supervising staff dining room food service during meal hours
- Assisting in the development of menus and preparing daily food production sheets
- Overseeing proper and safe use of cleaning agents as per the facility's manual
- Supervising daily food production, maintaining food sanitation standards and conducting preventative maintenance
- Ensuring correct portioning methods are followed
- Maintaining adherence to sanitation policies and procedures outlined by KHMC and the Director
- Responsible for opening/closing rounds
- Assisting tray line employees when necessary
- Ensuring completion of food evaluation and temperature sheets daily
- Providing food and supplies for catering and special food functions
- Evaluating resident dietary requests according to nutritional protocols
- Overseeing and maintaining refrigerator temperature log
- Overseeing and maintaining dishwasher temperature log and pot washing sanitizing chemicals
