Description
A Butcher attends to the meat preparation needs of guests: selection, advice, butchering, weighing, band saw, grind and packaging.


SKILLS

  • Physically fit;
  • Organized and neat;
  • Able to stand for up to 8 hours;
  • Work in a cold and loud environment;
  • Speak, read, write and understand the English;
  • Be able to bend, stoop, squat and lift up to 80 lbs. on a regular and continuous basis;
  • Must have at least 2 years of butchery experience with seafood, beef, pork, and poultry / game birds in a systemsbased, fullservice, highvolume, scratch kitchen restaurant setting;
  • Must have experience maintaining food cost goals by demonstrating a proactive awareness of station par levels, food rotation, proper labeling, and waste management;
  • Must have experience adhering to recipe and meat presentation specifications, as well as portion control;
  • Must comply with food safety and sanitation regulations;
  • Must have the ability to work a variety of hours, days, and shifts, including weekends and late nights;
  • Have an extensive knowledge of meat cuts and standard weights;
  • Customer Service skills.

DUTIES

  • Process Meat: process and prepare a variety of meats for retail sale: cut, trim, bone, prepare steaks, cutlets, and loins. Determine which portions to grind and decide how much meat to make into products such as sausages or cured meat;
  • Weigh and

Package Meat:
weigh, package, and label meat for retail sale. Determine how to store meat for sale or transport, ensure proper refrigeration of all meat products;

  • Maintain Equipment: utilize a variety of tools to process and prepare meat, including saws, knives, and grinders. Maintain this equipment through regular cleaning and routine repairs, including sharpening knives and saws. Regularly inspect workstations to ensure that equipment is in good working order and to prevent delays or accidents;
  • Sanitize Work Areas: maintain sanitized work areas throughout the shift. Clean equipment after each use, following safety guidelines and regulations, in order to prevent crosscontamination or the spread of foodborne illnesses. Conduct regular health and safety checks, ensuring work area adheres to safety and sanitation guidelines determined by the Food and Drug Administration;
  • Track Inventory and Supplies: maintain records of meat inventories and onhand supplies such as sausage casings and packaging materials. Inspect meat prior to processing to ensure correct quantities and maintain a high level of product quality. Maintain detailed reports and records of processing activities throughout the shift.
  • Assists guests with meat selection and shares knowledge of preparation and cooking techniques;
  • Displays and stores food in the appropriate temperature conditions as per Department of Health standards;
  • Stocks counter neatly, accurately and in a timely manner as per pricing menu and promptly informs management when meat quantities or supplies are low;
  • Prepare and send orders when needed;
  • Needs to provide help and be able to fillin in other store locations;
  • Minimal travel may be required;
  • Performs other duties as required or assigned.
CERTIFICATES, LICENSES, REGISTRATIONS

  • State of Illinois Department of Public Health Certification and ServSafe Food Handler Certification.
