Job Summary:
Our BOH team of Line Cooks, Slicers, and Prep Cooks, work together under our Chefs and Managers to execute all facets of the Cafes excellent food production and service: from receiving and inspecting produce, to cooking some of the citys best egg dishes, and from hand-slicing smoked salmon, to making our facility spotless at the end of the day.s.

Duties/Responsibilities:
We are hiring for all positions in BOH. Roles will include various areas of responsibility from the list below.
- Receive deliveries from purveyors. Inspect for quality and accuracy before accepting. Communicate with management about any issues. Put away orders in an organized way.
- Complete food prep tasks in accordance with Cafe recipes and Chefs direction to meet daily and weekly pars.
- Stock and maintain stations throughout the kitchen so that we are ready for busy service at all times.
- Prepare and plate finished dishes on the hot and/or cold stations to the specification of our menu standards.
- Slice smoked fish in accordance with Russ & Daughters standards. (Training will be provided)
- Maintain cleanliness and DOH compatibility in all stations and storage areas of the cafe.
- Wash dishes and kitchenwares during service, as well as frequently monitor and restock restrooms.
- Clean and maintain the facility during closed hours.
Required Skills/Abilities:
- Willingness to multitask and work beyond a single station or role as needed to assist coworkers and meet the needs of a busy kitchen.
- Basic understanding of or the ability to learn basic sanitation and regulations for workplace safety to maintain a spotless personal and general workspace (including all equipment) in compliance with DOH regulation as well as rigorous internal health and cleanliness standards.
- Basic understanding of or the ability to learn food handling techniques, preparation, and cooking procedures using standard recipes.
- Basic understanding of or the ability to learn how to use/operate, maintain, and clean culinary equipment including, but not limited, knives, scales, mixers, ovens, stoves.
- Ability to function well in a highpaced and at times stressful environment while maintaining a calm and collected attitude.
- Ability to work quickly and efficiently.
- Ability to work well as part of a team.
- Ability to maintain personal hygiene, health and safety regulations.
- Ability to communicate with coworkers and kitchen leadership.
- Ability to arrive on time.
Education & Experience:
- NYC Department of Health Food Handler certification is preferred.
- Prior experience in a fastpaced kitchen with plated food is preferred.
Physical Requirements:
- Prolonged periods of standing and working in our Cafe.
- Must be able to lift up to 50 pounds at times.
- Must be able to work weekend, holiday, and periodic extended hours as business needs require.
- Manual dexterity to cut, chop, and mix foods and perform other related tasks.
