    SUMMARY
    The Sous Chef For Avas Pizzeria & Wine Bar will oversee the restaurants food quality and ongoing staff training procedures while working collaboratively with and reporting directly to the Chef & General Manager.


    The Sous Chef must be driven to continuously improve kitchen operations through small changes. Our goal is to make our kitchens more efficient and effective by fostering a team atmosphere, improving everyday procedures, ensuring employee engagement, and making the kitchen staffs jobs more fulfilling, less tiring, and safer.

    RESPONSIBILITIES
    • Live the brand as a brand ambassador, making decisions in the best interest of the restaurant every time
    • Lead the kitchen team alongside the Chef or in absence of the Chef by promoting an ongoing positive operating and learning environment
    • Work with the Kitchen team to train and coach in a consistent manner to continuously develop skills and ensure they feel engaged and supported; encourage cross training of each station
    • Ensure that all products are consistently prepared and served according to restaurant standards for recipes, portions, cooking and serving
    • Work with the General Manager to optimize food cost and meet percentage goals as set for the restaurant
    • Assist the Chef in tracking product inventory and managing kitchen ordering to meet designated deadlines/order dates
    • Prepare daily prep lists and ensure the team is ready for service every night by communicating with team members and Chef.
    • Organize the walk-in for ServSafe compliance and ensure the alley is clear at the end of every shift
    • Receive and put away deliveries, following the established organizational system
    • Maintain safety and cleanliness in the kitchen at all times and ensure that daily cleaning guide is completed
    • Be knowledgeable of restaurant policies regarding personnel and discuss any employee violations of company policies, rules or procedures with General Manager to administer corrective action
    • Maintain open communication with the management team and attend weekly manager meeting
    WORKING CONDITIONS
    • non-traditional schedule including nights, weekends and some holidays
    • extended periods in a standing position, with considerable activity, movement, bending and lifting throughout the shift
    • ability to lift up to 50 pounds, as well as overhead lifting and moving of lighter objects
