    To prepare, season, cook, and serve nutritional, and well balanced meals for juvenile residents

    75% - Prepare, cook, and serve food in a cafeteria style setting.

    • Review daily menus and plan for preparation, gathering utensils and ingredients and adjusting recipe quantities according to daily head count.
    • Check for food allergies/special diet instructions and plan substitute meal(s), according to instructions.
    • Prepare, season and cook soups, meats, vegetables, desserts and other foodstuffs for meal and snacks, according to pre-determined menus, recipes, meal counts and portions.
    • wash, peel, cut and shred vegetables and fruits.
    • Measure and mix ingredients using a variety of utensils and equipment.
    • Observe and test foods being prepared to ensure they are completely cooked and check internal temperatures as required; place food in holding areas.
    • Properly portion food onto sanitized serving trays or paper carriers.
    • Interact with residents or staff to accommodate allowable meal changes and answer questions.
    15% - Clean kitchen area, equipment, and utensils
    • Determine foods that will be saved for a second use and properly store and label.
    • Clean serving line equipment and wash all used dishes/pans/utensils, either by hand or dishwasher.
    • Clean all food prep areas.
    • Sweep and mop floor and remove trash.
    • May involve transporting meals to satellite locations*.
    10% - Complete logs, inventories, and related documentation.
    • Complete multiple daily logs regarding production, cooking and refrigeration temperatures, chemical and utensil inventories, etc., both handwritten and electronic.
    SUPERVISION OF: None
    SUPERVISION BY: Work on individual cases is performed under the direct supervision of the Supervisor, Cook and is reviewed on the basis of results obtained.

    SERVICE RESPONSIBILITY:
    INTERNAL - Facility and Court staff.
    EXTERNAL - Youth, parents, guardians and other family members, teachers and school staff, volunteers. Provides for and prepares meals and snacks.

    PRIMARY EQUIPMENT, TOOLS, AND MATERIALS USED:
    Kitchen equipment and utensils, recipes, USDA, State of Missouri, and ACA guidelines, computer, telephone, keys, various reports and forms, computer generated or handwritten, manuals, vehicle; variety of computer-generated and handwritten forms/reports.
