I am teaching cooking classes at a educational center and I would like to know the best way to receive payments. I would prefer not to register as self-employed, as if I wait until November of this year, I could qualify for the reduced fee of 80€.

I am unsure if I could receive payment as "courses and conferences", so that the educational center could withhold 15% for income tax, but I am afraid of possible penalties due to the high amount.
