Description

Work directly with the Executive Chef and Sous chefs to supervise the stewarding team to ensure daily cleaning, organizing, and maintenance in the kitchen is up to proper sanitation guidelines.

This position is accountable for the general maintenance and cleanliness of kitchen, dish pit and dumpster areas, and other tasks included in the checklist.

The stewarding supervisor will be proactive with supervising their team, assigning cleaning projects daily and ensuring all employees are maximizing productivity.

Will work closing with the Banquets department to assist in ordering dishware for events and taking inventory of items upon delivery.


DUTIES AND RESPONSIBILITIES

Harvest Kitchen area:
  • Floors regularly swept and mopped
  • Trash removed frequently
  • Walls and prep surfaces scrubbed and washed nightly
  • All major kitchen equipment cleaned nightly (nothing left in tilt skillet unless specifically instructed by kitchen to leave overnight).
  • AM and PM stewarding team MUST check out with Chef on Duty before leaving for the night
  • All food items stored ASAP with special attention paid to perishable items, and extra attention paid to frozen items that need to be placed immediately in the freezer.
  • All walkin refrigeration swept and mopped 2 x daily and as needed
  • Soap dispensers and paper towel dispensers stocked

Employee Break Room:


  • Break room stocked with coffee and plates and silverware; clean and organized; trash removed
  • Steam table drained and cleaned nightly
  • Floors mopped
  • Shelving items cleaned and organized

Banquet Prep Room:


  • Cleaned, organized and reset every day, with all prep tables easily accessible, trash removed, dirty dishes removed from sink areas, and all surfaces swept, mopped, and scrubbed.

IRD area:


  • Swept and mopped
  • Trash removed

Pantry/Pool:


  • FOH & BOH floors, sink areas
  • Pantry trash
  • Pool Bar
  • Pool bar area cleaning (not the entire pool deck just the Palapa)
  • Pool bar storage room cleaning
  • Pool bar trash removal

Main Garbage Enclosure

  • Maintain this area
  • Clean floor weekly
  • Ensure container lids are ALWAYS closed
  • Kitchen large waste container: Clean, neat and organized. Maintain all bins outside in all trash areas.
  • Clean, neat and organized. The bin outside the kitchen is to be used for CARDBOARD ONLY—trash and glassware should be taken immediately to the main dumpsters. The area around the rolling bin must be free of garbage and food waste, to prevent rodents from gaining access to the kitchen.
  • Grease barrel

Education and Licensing:


  • High school or equivalent education required.

Skills and Experience:


  • Prior stewarding experience in resort/hotel environment required.

Grooming

  • All team members must maintain a neat, clean and wellgroomed appearance per The Ranch standards.

Competencies:

  • Must be able to speak, read, write and understand the primary language(s) used in the workplace.
  • Must be able to read and write to facilitate the communication process.
  • Requires good communication skills, both verbal and written.
  • Knowledge of The Ranch operations, its services, and facilities.
  • Most work tasks are performed indoors. Temperature is moderate and controlled by hotel environmental systems; however, must be able to work in extreme temperatures like freezers (10°F) and kitchens (+110°F), possibly for one hour or more.
  • Must be able to stand and exert wellpaced mobility for up to 4 hours in length.
  • Must have the ability to bend, squat and lift up to 50 lbs., including, but not limited to, pots and pans and trays of food or food items, on a regular and continuing basis.
  • Must be able to push and pull carts and equipment weighing up to 250 lbs. on a regular and continuing basis.
  • Must be able to exert wellpaced ability in limited space and to reach other locations of the hotel on a timely basis.
  • Must be able to bend, stoop, squat and stretch to fulfill cleaning tasks.
  • Must be able to exert wellpaced ability to maneuver between functions occurring simultaneously.
  • Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity.
  • Talking and hearing occur continuously in the process of communicating with guests, supervisors and other employees.
  • Vision occurs continuously with the most common visual functions being those of near vision and depth perception.

Physical Demands:


  • Requires manual dexterity to use and operate all necessary equipment.
