- Supervise food preparation
- Maintain a professional demeanor at all times
- Ensure proper storage and rotation of food items
- Guarantee the cleanliness and sanitation of the kitchen and equipment
- Assist in cooking during busy meal periods
- Oversee the preparation of employee meals
- Supervise kitchen staff including Cooks, Prep Cooks, Cafeteria Cooks, Receiving clerk, and Stewards
- Manage the setup of action stations for special events and banquets
- Maintain clean work areas and follow sanitation procedures for food storage
- Uphold high standards of personal hygiene and cleanliness
- Assist with scheduling and daily/weekly work plans

Job Description
SUMMARY:
Lead the kitchen operations in the absence of the Executive Chef, Executive Sous Chef, or Chef de Cuisine. Responsible for overseeing the preparation of all food items for a la carte, buffets, employee dining room, and other outlets.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
SUPERVISORY RESPONSIBILITIES:
Supervise up to twelve employees in various departments such as Lines, Cafeteria, Action Stations, and Stewarding. Responsible for coordinating and evaluating these units according to organizational policies and laws. Duties include hiring, training, assigning work, performance evaluations, managing schedules and inventories, addressing complaints, and resolving issues.
QUALIFICATIONS:
Successful candidates must be able to fulfill all essential duties satisfactorily. Requirements include a High School Diploma or equivalent, at least two years of related experience or training, and proficiency in communication and mathematical skills.
CERTIFICATES, LICENSES REGISTRATIONS:
Obtain or maintain a Florida Food Handler Certification or Instructor Certification.
PHYSICAL DEMANDS:
Employee must meet physical requirements for the job, including standing, walking, lifting, and other activities. Vision abilities such as close vision and color vision are necessary. Ability to taste and smell dishes or sauces prepared with alcohol is required.
WORK ENVIRONMENT:
Work environment may include exposure to various conditions such as wet/humid areas, extreme temperatures, and noise. Safety is paramount, and all employees must adhere to safety procedures.
