The Role:

  • Developing a fusion cuisine that incorporates various culinary influences from the APAC region.
  • Emphasizing the use of fresh, seasonal, and locally sourced ingredients in all dishes.
  • Utilizing menu engineering principles to plan menus, taking into consideration market and restaurant needs, recipes, costs, profits, and ingredient availability.
  • Identifying and responding to food and market trends for both hotel guests and the local community.
  • Monitoring and analyzing the food offerings of competing restaurants and hotels, and using this information to effectively manage competition.
  • Motivating chefs to meet market demands and ensure high-quality products.
  • Actively participating in Food & Beverage (F&B) marketing and contributing
