POSITION:
PM Baker


Previous baking experience or education is required.
We are seeking someone who can work all of the required shifts: 8:00am - 2:00pm Monday; 10:00am - 3:00pm Weds, Thurs, Fri & Sat (off Tuesdays and Sundays)**The PM Baker is responsible for preparing dough products including mixing and proofing our signature brioche and vegan doughs, preparing a variety of cake doughs; preparing buttermilk biscuits and other specialty items such as pate a choux, pie crusts and cookie doughs.


This is primarily a late morning/afternoon shift; although rare, the PM Baker will be trained to work the AM baker's morning shifts when necessary.

The PM Baker goes through extensive training and will be cross-trained on the AM Bakers' morning duties, including how to prepare cake donuts, roll and cut brioche donuts, and baking bread.

Our training is structured so that the PM Baker builds a strong product-knowledge foundation and is able to handle many different situations that may arise.

We use high quality ingredients and rotate our donut flavors to showcase the best of what's in season.

Naturally, we avoid artificial ingredients and preservatives wherever possible because our customers deserve the best We hold our beverage program in as high regard as we do our donuts, serving Santa Barbara-based Coastal Coffee Collective coffee drinks and locally crafted beer and wine.

But we firmly believe that what keeps people coming back to Hook & Press is our obsession with providing an outstanding customer service experience.

WHO WE'RE LOOKING FOR


At Hook & Press, our PM Baker plays a key role in making sure our baked goods both look and taste amazing.

The PM Baker works diligently to scale, mix, and shape multiple types of dough that will become our fresh donut and bread products.


SKILLS

RESPONSIBILITIES
*Act in a responsible and professional manner that promotes the culture, values and mission of Hook & Press *Set the example for the donut production team as a whole by displaying consistent attendance and punctuality *Display strong time management skills *Promote a team environment by getting to know the team members on a personal level *Communicate effectively with other Kitchen Leads, which include the Lead Pastry Chef


Key Responsibilities:
*Have a thorough knowledge of all of the Hook & Press dough recipes *Willingness to learn all the methods on the bakery side so that they may fill in for the AM baker or assist the Pastry Chef as needed


These disciplines include:

dough mixing, overnight baking, cutting, proofing, frying, decorating and prep *Measure or weigh flour and other raw ingredients to prepare various types of doughs, using scales or graduated containers *Ensure counts are done throughout each shift to double check that accurate amounts of dough are being mixed *Visually identify quality or bad product before and after it is mixed; remove any unacceptable product *Communicate with kitchen leads to cross check quality and production numbers *Ensure cleanliness of work areas including but not limited to: tables, shelves, equipment, walls and floors *Ensure maintenance of equipment and tools, reporting any malfunctions to the Owner immediately *Work with Lead Pastry Chef as a team.

Lead Pastry Chef and PM Baker are expected to work together and communicate in order to ensure all prep work can be completed in a timely manner, especially when it comes to big jobs.


REQUIREMENTS
*Outstanding attention to detail *Ability to lead and inspire co-workers with a positive attitude *Help build a diverse culture focused on creativity, passion and open communication *Ready to be challenged through an inspirational approach to take their career to the next level *Must be able to stand the majority of the work day and lift up to 50 pounds.
Must be willing to work weekends and some holidays *Food Handler's Certification (within 30 days of hire)
