- Develops an operating budget
- Monitors and takes corrective action as needed to help assure budget goals are attained
- Assures effective hiring and training for new staff and professional development for experienced staff are planned and implemented
- Inspects to ensure all safety, sanitation, preventative maintenance and other standards are consistently met
- Greets guests and oversees actual service on a routine, random basis
- Works with food and beverage leadership team to determine areas of concern and develop strategies to improve the department's financial and operating performance.
- Assures all standard operating procedures for revenue and cost control are in place and consistently utilized
- Helps plan and approve marketing and sales promotions for the food and beverage department
- Approves menus proposed by the Chef de Cuisine for all outlets and special events
- Helps develop wine lists and other beverage menus and promotion programs
- Assists in planning and implementing procedures for special events and banquet functions
- Establishes standards and procedures of work for all positions within the department
- Ensures correct handling procedures to minimize china and glassware breakage and food waste
- Manages long range staffing needs for the department
- Ensures all legal requirements are consistently adhered to including wage and hour and federal, state or local laws pertaining to alcoholic beverages
- Monitors purchasing and receiving for products and supplies to ensure proper quantity, quality and price
- Maintains appearance, upkeep and cleanliness of all food and beverage outlets
- Monitors employee dress code
- Approves and codes invoices before submitting to accounting
- Responsible for the proper accounting and reconciliation of point-of-sale systems and reservation systems
- Audits and approves payroll and live entertainment
- Prepares reports concerning revenue, payroll expenses, and department expenses
- Oversees the flow of cash and financial instruments according to company policies
- Stays up to date on industry trends and popular concepts
- Reports to maintenance needed repairs or unsafe conditions
- Performs other duties as assigned

Job Title: Food and Beverage Director
Reports To: Director of Regional General Manager
Summary: The Food and Beverage Director oversees all aspects of the organization's food and beverage planning and service. Directly supervises the Chef de Cuisine and Banquet Managers to maintain the high standards of food and beverage quality, service and marketing to maximize profits through outstanding customer service.
