Work Schedule:

Monday -Friday; 6am - 3pm


Job Summary:

Responsible for scheduling work assignments of other food personnel and ensuring meals are being served in quality and quantity to meet trainees' needs.

Establishes menus and verifies sufficient quantities of foodstuffs are being prepared. Promotes an environment of customer service, hospitality, and student satisfaction.

Duties/Responsibilities:


  • Directs the workflow of food service personnel.
  • Utilizes recipes and work sheets to plan amount of food needed and preparation methods.
  • Assists in the preparation of food.
  • Checks kitchen to ensure all work areas are kept clean and that safe work habits are being used and assists with regular cleaning.
  • Directs work of trainees who are assigned to the kitchen during assigned shift.
  • Checks kitchen at the end of assigned shift to make sure all leftover foods are properly stored.
  • Monitors inventory of foodstuffs and requests additional food as necessary.
  • Assists in the preparation of reports as required.
  • Continuously comes up with new, improved menu ideas.
  • Make sure all sack lunches are prepared and distributed.
  • May be assigned to supervise an activity, a special event (either on or off center).
  • Maintains a complete inventory file on food and equipment.
  • Develops a rotating menu in compliance with PRH requirements, coordinates the SGA food committee, completes food surveys with students to ensure students have input into menu planning.
  • Keeps accountability on all knives throughout shift.
  • Maintains strict safety and sanitation codes and procedures.
  • Prepares menus and determines the quantity and quality of all foods ordered.

Requirements:


_ Qualifications:

Minimum:

High school graduate or equivalent. Two years' experience in institution food preparation.


Preferred:

Three years' experience in an institutional food service capacity, one of which was in a lead or supervisory position.

SERV safe certification.


Knowledge:

Knowledge of Federal, State, County and City regulations for legal operation of a food service facility. Ability to effectively relate to student population. Knowledge of good nutrition, especially as it relates to youth. Knowledge of OSHA regulations. Must meet State or local food handling requirements, whichever are more restrictive.
