- Plan, staff, organize and coordinate the daily preparation of all meals and menu development with documentation in all levels of care and for special events in accordance with fine dining standards.
- Development and documentation of standardized recipes for all levels of care using company recognized and contracted vendors for all purchases.
- Maintain budget compliance in both labor and raw food costs.
- Purchase from approved vendors and utilize corporate purchasing programs.
- Ensure compliance with Resident dietary restrictions.
- Conduct regular, weekly Quality Assurance Audits.
- Practice safe and sanitary food handling per state and local regulations. Practice all safety and loss prevention procedures per local, property, and restaurant standards.
- Responsible for in-services of kitchen staff as required or needed.
- Work in consultation with the Director of Dining Services and Certified Dietary Manager in meeting all state and federal guidelines.
- Regular, on-going consultation with the Legacy at Midtown Park Chef.
- Manage and track employee availability, schedule changes, and employee time off requests.
- Responsible for the hiring, orientation, training, evaluation, and discipline of kitchen staff.
- Supervise and assign duties to all production and utility personnel.
- Create and maintain a motivating environment that encourages employee involvement, creativity and problem solving.
- Minimum of 4 years as an Executive Chef with fine dining experience.
- City of Dallas Food Handlers certification.
- Culinary degree strongly preferred but not required.
- Able to effectively communicate with employees and supervisors with a positive end result.
- Able to prepare food in a senior living environment, which meets or exceeds hospitality and service standards.
- Able to work holidays, weekends and for pre-planned events which often include evenings.
- Maintain professional relationships with food and equipment vendors.
- Working knowledge of Kosher dining requirements and dining needs specific to Jewish residents and community, working in coordination with Rabbinical supervision.
- Able to provide fine dining in a variety of venues.
- Able to prepare visually appealing and palatable therapeutic/modified diets
- Possess good computer skills related to payroll systems and other software.

Description
The Executive Chef is responsible for campus wide food production, food presentation, and all back-of-the-house activity, including the Stanleys Caf.
