Job Summary
The Porto Vista Hotel located in Little Italy, San Diego is looking for an
experienced Food & Beverage Manager.
This person will be 100% responsible for all Food & Beverage areas of the hotel, including a main-stream restaurant and all phases of catering and convention banquet functions.
NOTE:
This is NOT a first time F&B Manager Position and requires previous banquet leadership.
DUTIES AND RESPONSIBILITIES:
- Achieve budgeted food & beverage revenue and maximizing profitability.
- Manage department labor & food costs; develop and maintain all cost control procedures.
- Provide detailed monthly forecast of revenues, food cost & labor for each department.
- Establish food & beverage inventory PAR's with Chef & Beverage Manager based on forecast and business levels.
- All Food & Beverage Ordering completion of PO requisitions for all items purchased.
- Conduct monthly inventories of all F&B items (kitchen goods, china, glass, silver, etc)
- Must be knowledgeable in all aspects of execution of convention and catering banquet events. Detailed understanding of BEO, timing, room setup, pricing, meal guarantees and dishup standards.
- Completion of weekly schedule and shift duties, maintaining the budgeted labor cost while ensuring a positive and consistent guest experience.
- Responsible for all staff training on service standards and customer service development. Achieving TOP LEVEL service from all employees.
- Handle all employee issues with Human Resources, including time keeping, new hire paperwork, annual reviews,disciplinary & termination procedures and all necessary HR documentation.
- Participate and provide input towards F&B Marketing activities, responsible for soliciting local business with promotional offerings.
- Know the competition, conduct competitive analysis every six months to evaluate hotel market position.
- Positive impact on managing the hotel reputation, train team on problem resolution to minimize customer complaints.

Staff Meetings:
Conduct internal departmental meetings with staff to ensure daily communication is happening between all managers & line level team.
- Quality assurance of all Food & Beverage.
- Participate in overall Hotel Maintenance and cleanliness. Report any deficiencies in equipment.
- Minimize the number of Workman's Compensation claims by following safety standards.
- Ensure all staff have 'Smart Serve' certification.
- Must be a Team Player
- Solid relations with coworkers and management.
- Must have the Manager's Food Handler's Card
- Maintain All F&B staff will Certifications, RBS and TIPs.
Pay:
$70, $85,000.00 per year
