PURPOSE AND OBJECTIVES OF POSITION


This position is responsible for cleanliness and sanitation of tableware, cookware, and glassware; all kitchen area cleaning, pot and pan washing areas and dishwasher area.


ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Cleans and stores all glassware, china and table utensils using proper procedures to ensure best results.
  • Cleans cookware and presentation pieces for use by kitchen associates.
  • Maintains cleanliness and sanitation according to company standards. Follows "clean as you go" standards. Keeps dishwashing area clean at all times.
  • Ensures that dish water is changed when needed, but no less than every two hours.
  • Assists in any utility station and/or kitchen station as needed.
  • Makes sure the floors are kept swept and dry at all times; uses "wet floor" warning signs.
  • Stores glasses in proper glass rack; organizes glasses in glass alley.
  • Breaks down trays, sets up dish machine, washes dish ware, and sorts and stores all clean china, glass and silver using proper procedures.

SUPPORTIVE FUNCTIONS

  • Delimes dish machine when needed.
  • Properly uses garbage disposal and grease traps.
  • Responsible for floor persons duties during PM shift.
  • Responsible for silver polisher duties during their absence.
  • Perform special cleaning projects as assigned.
  • Supervisor may also request additional duties not mentioned above.
  • Clean and polish dish machine with stainless cleaner when needed.
  • Report any issues with the dish machine to shift supervisor and Executive steward.

JOB KNOWLEDGE, SKILL AND ABILITY

  • Be able to effectively communicate to all employees through both written and verbal skills.
  • Maintain a confident and calm presence.
  • Be self motivated, organized and discipline in work performance.
  • Process a minimum 1 year experience in stewarding responsibilities in luxury hotel or restaurant of similar quality of Langham Hotel Boston.
  • Ability to stand, sit, grasp, lift and carry up to 50 pounds, walk, kneel, squat, bend, push and pull.
  • Use nonverbal auditory and visual sources of information e.g. alarms.
  • Must be available to work a flexible schedule.
  • Maintain sanitation guidelines.
  • Ability to assist in controlling daily operational needs.
