- Ensures the proper distribution of assignments for performance of duties;
- Supervises the handling, preparation and serving of food in accordance with sanitation regulations;
- Observes and supervises the work performance of employees to ensure adherence to established standards;
- Supervises dietary software and produces patient tickets and tally sheets for cooks;
- Supervises the cleaning and maintenance of assigned work areas and equipment; and
- Trains new employees as assigned, and assists with orientation of new employees.
- Supervises employees on tray line preparing patient trays;
- Inspects trays for attractiveness, palatability, and temperature of food;
- Checks menus, marks trays to be held, and makes necessary substitutions and changes; and
- Coordinates loading, delivery, and pickup of food carts on schedule.
- Monitors established procedures and methods for kitchen service unit.
- Inspects assigned areas to observe operations and to ensure proper functioning of equipment;
- Monitors activities of assigned personnel in regards to job performance and compliance with standards; and
- Inspects each workstation at the end of the shift to ensure that each station is in satisfactory condition for the next shift.
