SUMMARY:
Supervises the activities in the kitchen to provide the highest quality of service and product to residents in a cost-effective manner


RESPONSIBILITIES:

  • Directs and supervises all dietary functions and personnel.
  • Follows policies and procedures for the Nutritional Services Department.
  • Accountable for the proper storage of all food and supplies used by the Nutritional Services Department and minimizing loss.
  • Ensures that the kitchen staff follows the required food handling and preparation policies, procedures, and regulations.
  • Schedules work hours and assignments also reviews and checks staff work performance. Is responsible to see that each shift is properly staffed.
  • Is responsible for food purchase, production, and timely service of meals.
  • Evaluates and provides direction in food production, including standardizing recipes, portion control, problemsolving, and Quality Assessment and Assurance activities.
