TITLE:
Head Chef/Kitchen Manager
STATUS:
Full Time
GENERAL STATEMENT OF DUTIES:
To be responsible for creating, planning and executing all food and beverage items for all In-House Dining, LOEL's Home Delivered packaged meals, and various Programs meals.
SUPERVISION RECEIVED:
The Head Chef reports to the President/CEO of LOEL, and works with the Food Program Coordinator, and San Joaquin County dieticians to coordinate and maintain daily healthy, wholesome and nutritious meals.
SUPERVISION EXERCISED:
Plans, supervises and reviews the work of chef's assistants, Home Delivered Food Program drivers, volunteers, or others engaged in food preparation and cooking activities.
LIST OF PERFORMED DUTIES:
- To develop, create and use existing cuisineappropriate menu items daily within a predetermined budget. Build a unique and diverse menu selection that is appealing to seniors.
- To estimate food needs in advance and to requisition kinds and amounts of food necessary to comply with menu requirements.
- To supervise the receipt, storage, care and distribution of food and supplies, kitchen related items, for the In-House Dining Program, LOEL Home Delivery Program, and other Program meals.
- To be responsible for the preparation of meals, adhering to approved standardized recipes and a predetermined time schedule.
- Shop regularly for incidental and common items needed for kitchen and the facility as a whole.
- To be responsible for maintaining the kitchen, storage rooms and related areas according to LOEL Company Standards, and health code regulations, in a clean condition and free from pests and rodents.
- To hire, instruct, train and supervise staff in the proper preparation, cooking, plating and delivery of food, as well as proper cleaning techniques and hygiene, and maintenance of the kitchen.
- To ensure that all aspects of the kitchen and related production of menu items follow LOEL Company standards and local regulations for quality, food safety and hygiene.
- To prepare the kitchen daily, turning on necessary equipment and appliances.
- To prepare and complete meals along with supporting staff as needed.
- To be responsible for the implementation and completion of all kitchen related paperwork.
- To maintain kitchen equipment and appliances, and schedule repairs and maintenance as needed.
- To maintain all functions of the kitchen in an organized and professional manner. To do all other duties as assigned.
Pay:
$ $30.00 per hour
Education:
- High school or equivalent (preferred)
Experience:
- Culinary experience: 3 years (required)
- Cooking: 3 years (required)
- Kitchen management: 3 years (required)
License/Certification:
- Food Safety Certification (required)
