Position Summary:
Reporting to the Nursing Home Administrator, this position is responsible for the leadership, direction, oversight and clinical coordination of the dietary function of Lakeland Health Care Center and the Senior Meals Program (SMP).
The Food and Nutrition program provides oversight of the dietary needs of the residents, assessment and treatments that assist in administration of medical cares and oversight of the senior meals program through the Sustainable Kitchen's scratch cooking model.
This position is designated as the Manager and directs the duties of the food and nutrition staff and provides support to ensure that high quality food and nutrition services are delivered to residents and consumers.
This position will create and implement management policies; assign and review work of staff; provide practical and clinical supervision; and provide kitchen skills training on an as needed basis.
This position is responsible for coordinating services with divisions within LHCC and the HHS Long Term Care Division; assuring compliance with state and federal laws, administrative rules and policies; planning and monitoring consultation services; and maintaining and reporting of program data.
This position is responsible for ensuring prompt billing and oversight of assigned program budgets.SUPERVISION
This position directly supervises a Food and Nutrition Services Lead, a SMP cook, 3 Cook and 19 Relief Cook positions as well as food service pool staff.
Responsibilities include interviewing, hiring and training employees; planning, assigning, scheduling and directing work; evaluating performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Essential Duties and Responsibilities:

Oversee the day to day operations of the LHCC Food and Nutrition Services department which includes; monitoring department activities, recruitment and hiring, performance evaluation, staffing and disciplining as needed.
Formulate the Food and Nutrition Services department annual budget and maintain sound financial objectives by forecasting, monitoring monthly financial performance, aligning monetary resources, and minimizing the impact of variances.
Develop, update, and communicate departmental policy & procedures in accordance with State and Federal regulations, County Ordinances, and Administrative Procedures.
Implement Food and Nutrition requirements for the Senior Meal Program.
Organize the kitchen to produce up to 300 meals a day for a combination of congregate and home delivered meals.
Utilize the Sustainable Kitchen's scratch cooking model for all meals within the Health Care Center and the Senior Meals program.
Coordinate with the Health and Human Services Aging and Nutrition Director to assure that the needs of the health care center and the senior meal program are being met.
Monitor food preparation methods, portion sizes and garnishing and presentation of food in order to ensure that food is prepared and presented in an acceptable matter.
Monitor and maintain the nutritional needs of residents, focusing on the prevention of weight loss and dehydration. Provision of dietary reports on weight loss for QAPI meetings on a monthly basis.
Gathering information on new residents on their preferences. Completion of dietary sections and assessments in UDA board. Conduct nutritional assessments, attend and participate in nutrition risk meetings, and participate in the MDS and Care Planning process.
Resolve all food-related grievances and resident and family complaints
Order and receive food; standardize recipes and test new products for use
Provide educational programs for Food Service employees and all staff as needed. Provide on-going training for staff to improve efficiency and production skills.
Assist in purchasing equipment and supplies
Maintain a safe, comfortable and functional environment by assessing the household for potential hazards, implement and practice utilizing appropriate techniques regarding sanitation, infection control, fire safety, disaster preparedness and emergency care, investigate and report all incidents and accidents, and observe the team for safe work habits.
