    Description

    Sweetwaters a modern, seafood-forward, waterfront restaurant is opening in Fort Lauderdale, built around polished service, exceptional ingredients, and a high-level of hospitality.

    We are assembling the founding leadership team that will set the culture, the standards, and the guest experience from day one.

    This is an opportunity to help create a restaurant that feels refined without being formal, elevated without being pretentious, and deeply hospitality-driven at every level.

    Position Overview

    We are seeking an Executive Chef to lead the culinary vision and kitchen operations for this new restaurant opening. This is a hands‑on leadership role responsible for translating our brand and concept into a high‑performing kitchen operation that delivers exceptional guest experiences, strong financial results, and a positive team culture.

    The ideal candidate is a culinary leader and operator—someone who combines creativity with discipline, thrives in a structured organization, and has successfully opened and stabilized new restaurants.

    Key Responsibilities

    Culinary & Concept Execution

    • Partner with leadership to execute the menu and culinary standards consistent with brand vision
    • Oversee menu development, testing, and execution with a focus on quality, consistency, and margin
    • Ensure all food meets presentation, flavor, and safety standards
    • Maintain recipe documentation, prep specifications, and plating guides

    New Restaurant Opening

    Lead all back‑of‑house opening activities, including:

    • Kitchen setup and workflow input
    • Vendor coordination and initial ordering
    • Menu roll‑out and test runs
    • Hire, train, and develop the opening kitchen team prior to launch
    • Execute a smooth, disciplined opening and stabilization period

    Financial & Operational Management

    • Manage food cost, labor cost, and kitchen P&L performance
    • Forecast, budget, and monitor inventory levels
    • Partner with Operations and Finance to ensure financial targets are met
    • Implement controls to reduce waste, optimize yields, and improve efficiency

    Team Leadership & Development

    • Recruit, train, and retain a high‑performing culinary team
    • Build a strong leadership bench (Sous Chefs, Kitchen Managers)
    • Foster a culture of accountability, respect, and continuous improvement
    • Conduct performance evaluations and ongoing coaching

    Compliance & Enterprise Collaboration

    • Ensure compliance with all health, safety, and sanitation standards
    • Operate effectively within a larger restaurant company structure
    • Collaborate cross‑functionally with Operations, Supply Chain, HR, and Training
    • Execute company systems, reporting, and processes consistently

    Qualifications & Experience

    Required

    • 10+ years of progressive culinary experience
    • Prior experience as an Executive Chef or Chef de Cuisine
    • Proven experience opening at least one successful restaurant

    Strong understanding of:

    • Food & labor cost management
    • Menu engineering
    • High‑volume kitchen operations
    • Demonstrated ability to lead, develop, and retain teams
    • Experience working within a corporate or multi‑unit restaurant environment

    Preferred

    • South Florida or similar high‑volume, seasonal market experience
    • Background in upscale casual or fine‑casual dining
    • Familiarity with structured SOPs and enterprise systems
