I have a lot of experience in many different facilities but I told you one. I set up an organized the break room or lunch room for employees but not customers in hotels. Make sure everything is in place before the cafeteria opens. The dishes,  utensils,  napkins, cups, make sure the coffee is brewed. Put hot food on the line,  make sure the salad bar is ready an fresh. Put ice in the machine, the drinks sweetener  are ready and full. Clean and sanitize the entire department .Make sure every containers are full not empty like ketchup, ice-cream machine, cereal,  milk. Then close the cafeteria lunch room, put away hot food. Clean up the department. Windows, floors,  dishes in place. Close the salad bar, Everything has to be spotless ,put into place, well organized correctly  and fast!
