POSITION PURPOSEE**The Food and Beverage Manager oversees dining services at Cal-a-Vie Health Spa. This includes hiring, training, and directly supervising a large team of servers and shift leads. This role will work in conjunction with the Executive Chef to plan, implement, and monitor departmental budgets. The Food and Beverage Manager plans, organizes, and executes special events deliverables for weddings, private birthday parties, and anniversary celebrations.


ESSENTIAL FUNCTIONS

  • Manage service in all assigned food and beverage areas and events
  • Maintain detailed and accurate records of events and groups
  • Ensure effective implementation of orientation and training for new staff and professional development activities for experienced staff
  • Monitor employee payroll records to minimize overtime, ensure accuracy, and keep labor costs within budget
  • Ensure all standard operating procedures for the front of the house staff are followed
  • Evaluate and supervises performance; carry out disciplinary action as needed in
  • Ensure all legal requirements are consistently followed including, but not limited to, federal and state wage/hour laws and local food safety and alcohol sale/consumption regulations
  • Ensure that new staff receive the appropriate safety instructions and training; establishes and enforces all safety policies and procedures including OSHA regulations; ensures proof/documentation of training is captured and maintained in employees' personnel files
  • Ensure the department is in compliance with the company's uniform requirements and standards
  • Monitor purchasing and receiving procedures to ensure proper quantity, quality, and price
  • Review and learn new techniques for food preparation and presentation to maximize guest satisfaction and minimize food costs
  • Consult daily with the Executive Chef to ensure the highest level of guest satisfaction
  • Greet guests and routinely oversee actual service
  • Create detailed BEO's to ensure all areas of food and beverage is successfully executed
  • Communicate and collaborate effectively with other departments to ensure sufficient staffing levels for all events; assign, monitor, and oversee execution and completion of staff responsibilities
  • Audit and approve weekly payroll with the Executive Chef
  • Establish and maintain professional business relations with vendors
  • Perform periodic inventory of China, glass, and silverware
  • Completes other tasks and projects as assigned by the Executive Chef

POSITION QUALIFICATIONS

Education/Certification:
Bachelor's degree in Hospitality Management or Culinary Arts degree preferred; San Diego County Food Handler - Manager Certification


Knowledge:
Food and beverage cost controls and operating procedures; accounting; menu design; marketing and promotions; wine, spirits, and bar operations; POS systems; team building, training, and maintenance


Experience:
Ten (10) years as a Food and Beverage Manager OR any equivalent combination of experience and training that provides the required knowledge, skills, and abilities; five (5) years in a fine dining atmosphere


Skills/Abilities:

High level of assessment skills;
ability to deal with the public and assist with media events on /off property; highly driven and innovative; must demonstrate excellent interpersonal and communication skills; strong organizational, prioritization and time management skills; impeccable follow-up skills; ability to plan, and design menus; ability to draft and follow budget; ability to read and interpret documents such as safety rules, contracts, and procedure manuals; ability to get along with co-workers and work as a team; must be able to work in a high stress environment and maintain positive energy in the department; ability to react quickly to resolve problems or conflict.


Availability:
Able to work any day of the week, any shift, and long hours when necessary (including weekends and holidays and on-call)
