Orso Alaska is a downtown Anchorage dinner restaurant with an Italian influence and a strong emphasis on Alaskan seafood. We run a professional, fast-paced kitchen built on craftsmanship, consistency, and teamwork. If you take pride in clean execution, strong ticket control, and leading from the line, you will fit here.

Role Summary

The Line Cook Supervisor is a working lead who helps run the dinner line. You will own your station, set the pace during service, support the expo flow, and coach the team to deliver consistent, high-quality plates. This role requires calm urgency, strong communication, and the ability to maintain standards under pressure.

Key ResponsibilitiesRun the dinner line (service leadership)

· Execute at a high level on your station while guiding the team through the push.

· Maintain awareness of ticket times, coursing, and pickup timing so tables receive a cohesive experience.

· Communicate clearly with expo and other stations; call backs, fire times, and quality holds as needed.

· Hold plating, temperature, and seasoning standards; fix issues before food leaves the window.

Mise en place and station readiness

· Set up, stock, and organize your station for a smooth service (tools, pans, backups, labeling, and pars).

· Work with the chef team to prioritize prep and ensure coverage for volume nights.

· Keep your station clean and ready to reset quickly between pushes.

Coaching and accountability

· Train and mentor line cooks: station standards, prep methods, timing, and quality control.

· Model professionalism, urgency, and teamwork; redirect problems early and constructively.

· Support a respectful kitchen culture and lead by example.

Food safety and sanitation

· Follow safe food handling practices (temps, cooling/reheating, allergen awareness, and cross-contamination prevention).

· Maintain cleanliness throughout service; close down properly and verify safe storage of product.

· Use chemicals safely and consistently; keep labels and storage organized.

Required Qualifications

· 3+ years of line cook experience in a scratch kitchen; demonstrated success during busy dinner services.

· Experience leading a shift or station (lead line cook, line supervisor, kitchen shift lead, chef de partie, or similar).

· Strong knife skills and core techniques (saute, grill, roast, finishing, and sauce work).

· Ability to manage ticket flow, prioritize tasks, and maintain speed with consistency.

· Excellent communication: clear calls, calm tone, and a solutions-first approach.

· Strong sanitation habits and working knowledge of food safety standards.

· Ability to stand for long periods, lift up to 50 lbs, and work in a hot, fast-paced environment.

Preferred Experience

· Upscale, fine dining, or upscale-casual background with high standards for plating and pacing.

· Seafood-focused cooking experience (fish cookery, proper handling, and doneness control).

· Italian technique familiarity (pasta, sauces, braises, and finishing).

· Expo experience or demonstrated ability to coordinate across stations during peak volume.

· Ticket times are controlled through communication, anticipation, and smart pacing.

· Plates go out consistently: correct cook temp, seasoning, portioning, and clean presentation.

· You elevate the team by coaching in the moment and building confidence in others.

· You take ownership: you see problems, you solve them, and you help the line succeed.

Pay: $ $25.00 per hour
