Main Purpose of Job

To direct all daily activities of the food service operation at the Green Ridge Youth Center and the Backbone Mountain Youth Center. This includes planning, organizing, evaluating, and directing food production and food service including the procurement of food and food service supplies. This position supports the mission of the agency by providing safe, nutritious, and appetizing meals.\r

POSITION DUTIES

Plans,\r
organizes and directs the daily food production and food service program.\r
Coordinates the scheduling of meals with other daily operational programs and\r
activities within the facility.\r
\r
\r
\r
\r
Supervises\r
kitchen sanitation and safety. Monitors the food service operation for\r
compliance with HACCP-based standard operating procedures as defined in the\r
HACCP policy binder. Monitors the food service operation for compliance with\r
health department regulations including COMAR and DJS Juvenile\r
Detention Standards.\r

\r
\r
Utilizes\r
daily population counts and the DJS menu to determine the quantities of food to\r
procure based on food storage inventory. Performs an inventory of food and food-related\r
supplies on a regular basis as needed.\r
\r
\r

MINIMUM QUALIFICATIONS

Experience: Six years of experience, two years of experience managing�large-scale food service operations in an institutional, commercial, industrial or similar organization and an�additional four years of experience supervising in a large-� scale food service operation.\r

1. Candidates may substitute the possession of a Bachelor's�degree from an accredited college or university and two�years of experience managing large-scale food service�operations in an institutional, commercial, industrial or�similar organization for the required experience.\r
2.�Candidates may substitute U.S. Armed Forces military service experience as a commissioned officer in Food Services Officers classifications or Food Services Manager and Services Officer specialty codes in the food service�management field of work on a year-for-year basis for the required experience.\r

Experience in food production or service in an institutional\r
setting such as hospitals, nursing homes, universities, or correctional\r
facilities.\r
