- Have command of all aspects of managing and execution of kitchen operations, including menu development, seasonal specials, catering menu and execution, food costing measures (inventory control, waste/spoilage, menu costing), vendor relations and ordering, spreadsheets, hiring/firing, staff development, maintenance/cleaning scheduling, dealing with emergencies, and potential physical space build outs. Pay: $66,560 per year
Position Overview: Mare Island Brewing Co.-a successful, customer service driven, rapidly-growing craft brewery-seeks a seasoned, experienced, worthy soul to join our team in the management position of Sous Chef. This position will work with-and report directly to-the Executive Chef, and will be responsible for managing culinary operations for the given location.
Our Ferry Taproom is located on the Vallejo Waterfront and houses a full kitchen, 20 taps, and some of the best views the North Bay has to offer. Our kitchen offers made from scratch pub eats, artisan apps, salads, entrees, and the best burger in town.
Our separate 8,000 square foot Coal Shed Brewery on the Mare Island waterfront serves as our beer production facility, private event space and the location of our food truck, The Pie Wagon. We offer delicious soups, salads, sandwiches, tacos, and more from our kitchen named for the historic WWII food trucks of Mare Island.
We have a very solid and committed chef team consisting of our Executive Chef and Sous Chef. The support staff is committed and you would have the freedom and ability to bring in new hires to fill out the rest of the needs in the kitchen.
We are looking for experience, ability, commitment, and a desire to organize and execute a solid, multi-faceted food program.
Ideal candidate will:
Starting salary of $66,560 per year (depending on experience), paid vacation, 401K(after probation period) and health insurance plans; we want the right person poised to hit the ground running. Salary growth available as we expand.
