    **Description**

    **Position is eligible for a $1,500 Sign - On Bonus**

    Responsible for the successful achievement of operational, financial, and quality goals; Interviews, hires, trains, supervises, counsels, and motivates the kitchen team while controlling production, quality and food costs. Responsible for the construction, development and implementation of menus, the consistent preparation of innovative and creative cuisine of the highest quality, presentation, and flavor for the dining rooms, and special events, which result in outstanding guest satisfaction, improved market share, increased covers, and revenues in all revenue generating outlets. Provides standards of quality and elegance equally in style and manner to all standards that apply per unit.

    **WORK TO BE PERFORMED:**

    Trains, develops and motivates supervisors and culinary staff to meet and exceed established food preparation standards on a consistent basis. Teaches preparation according to well-defined recipes and follows up and discusses ways of constantly improving the cuisine.

    Works with apprenticeship program and collaborates with HR on recruiting trips.

    Displays exceptional leadership by providing a positive work environment, counseling employees as appropriate and demonstrating a dedicated and professional approach to management.

    Delegates as appropriate to develop supervisors and subordinates to accept responsibility and meet clearly defined goals and objectives.

    As a part of the management team, displays an attitude of loyalty, dedication, confidentiality and a willingness to cooperate with other team executives and staff. Accepts projects and responsibilities as assigned by the leadership team and completes in a timely manner.

    Ensures all equipment in the kitchens is properly maintained and in working order in accordance with health regulations and Colonial Williamsburg standards.

    Coordinates with support departments for acquisition of needed goods and services.

    Ensures products are prepared in a consistent manner and meet departmental appearance/quality standards and to minimize food cost.

    Provides management and support to the culinary staff, ensuring efficiency in the daily operation.

    Follows and enforces all applicable safety/sanitation procedures specified for kitchen and food service areas by local health department sanitation standards.

    **Primary Duties:**

    Review ordering and production to maximize quality and cost of goods

    Review food cost and product mix reports with key kitchen and F&B staff.

    Review and approve (adjust as necessary) restaurant/banquet recipes.

    Review staffing to maximize labor expense.

    Troubleshoot unexpected or unusual situations in the kitchen.

    Interview, hire, train, mentor, and manage performance of all culinary supervisory/management staff.

    Attend and participate in meetings and administrative sessions as required.

    Design and conduct ongoing on the job training

    **Other Duties:**

    Prepare various products for special events and VIP functions as needed.

    Frequently review finished products for quality and recipe accuracy.

    Create and revise restaurant special events menus as requested.

    Schedule and conduct product taste panels with management (as required for new products).
