    Job Description and Duties

    Under the direction of the Correctional Health Services Administrator I/II, the Food Administrator I, CF plans, organizes, and directs all food service and dietary activities in a correctional facility health care program or may work under the direction of a Food Administrator II, CF in a large facility serving 3 meals per day to 500 or more residents. The Food Administrator I, CF works with clinical personnel on nutrition assessments, needs, dietary interventions and strategies, and plans dietary menus per clinical instruction. The Food Administrator I, CF develops, interprets, and applies standards and procedures governing the operation of the food service department; plans menus, estimates food requirements, and directs the preparation and service of food in accordance with the State food control system; inspects food facilities for compliance with sanitary, safety, and housekeeping standards; and plans and conducts In-Service Training (IST) programs for food service staff. Maintains order and supervises the conduct of inmates and protects and maintains the safety of persons and property.

    minimumqualifications:

    EITHER I
    One year of experience in California state service performing the duties of aDietitian.
    OR II
    Experience: One year of experiencein a hospital as a dietitian, nutritionist, or food service manager, withresponsibility for the technical direction of a group of diet pantry
    Education: Equivalent to graduationfrom college and completion of an approved internship in institutionalmanagement or dietetics. (Membership in the American Dietetic Association oreligibility for such membership may be substituted for the requiredinternship.)
    OR III
    Experience: Three years ofexperience as a dietitian, nutritionist, or food service manager withresponsibility for the technical direction of a group of dietary unitemployees, one year of which must have been under the supervision of aprofessionally trained dietitian. and
    Education: Equivalent to graduationfrom college with a Bachelor's Degree in Foods, Nutrition, or InstitutionManagement

    Working Conditions

    Travel is required.
