    Job Overview:

    Assist Bar Manager to manage the Baroperation and performance. Assists with directing and overseeing theperformance of the Bar staff and development of the Bar program.

    DUTIES AND RESPONSIBILITIES

  • Beimmaculately presented, attentive and proactive with the ability to respondquickly to needs of the guest and restaurant management team.
  • To identify training requirements, organize and follow through with "onthe job" and theoretical training.
  • To assist the beverage team in the building of an efficient department,by taking an active interest in the employees' welfare, safety and development.
  • To assist in the training of all employees, ensuring that they have thenecessary skills to perform their duties with the maximum efficiency and in themost productive manner.
  • To coach new bartenders, bar backs for the first week, following thetraining Schedule.
  • Supervise bar team, ensuring that the correct standards and methods ofservice are maintained.
  • To conduct and contribute to regular departmental communicationsmeetings.
  • To develop the team through leading by example as well as lead highmorale and motivation.
  • To monitor standards and supply of all restaurant equipment, ensuringthe management team is aware of any needs.
  • Adhering to cleaning checklists and opening/closing procedures, ensuringthat all staff are aware of these and checking back that they have beencompleted.
  • To ensure the bar manager closing duties are carried when manager isabsent from floor.
  • To control the bar during service, taking orders and issuing bills.
  • Managing Sales and Conversion

  • Assist the Bar Manager in the implementation of revenue generation initiatives and followthe budgeted sales targets.
  • SupportBar Manager in the delivery and measurement of promotional activities,including staff incentives.
  • Overseethe POS system and ensure proper operation in the restaurant by all users with the Bar Manager.
  • Financial Management

  • Ensurethat in-house control systems/audit requirements are adhered to.
  • Maintainrestaurant control systems in order to meet or exceed food and beveragemargins.
  • Assistsenior management in controlling costs without compromising standards and guestexperience and expectations.
  • People Development

  • Supportinduction/mentor process through personal representation incl. completion ofskills and standards.
  • Assistin staff training as required and liaise with senior management in thedevelopment of key team members.
  • Guide,coach and support staff during service, to increase the standard of service anddevelop teamwork.
  • Constantlymonitor the personal hygiene and grooming of all staff, taking appropriatecorrective action when necessary.
  • Beresponsible for planning training schedules, monitoring progress and keepingrecords of all staff training and performance, in liaison with the Manager.
  • Beresponsible for the induction process, ensuring that all new staff attendcompany induction and receive a comprehensive departmental induction and thenecessary training to perform their duties to the required standard.
  • Reportany guest or staff grievance to the line manager.
  • Health & Safety

  • Understandingrelevant H&S legislation and the implications on the operation of thedepartment.
  • Communicatingto the team their responsibilities within H&S.
  • Ensurea safe workplace by identifying hazards and taking corrective action.
  • Awarenessof health and safety audit reports and the required action within therestaurant.
  • Identifymaintenance activity required in order to uphold the required standard.
