    Job Description

    JOB TITLE Cook Level III

    DEPARTMENT Culinary/Food and Beverage

    SUPERVISOR Executive Chef, and Sous Chefs

    POSITION PURPOSE Entry level cook that follows orders from Chefs/cooks.


    ESSENTIAL FUNCTIONS

    • Prepare and cook food properly and quickly following all required recipes in a timely manner.
    • Store food correctly using proper rotation and dating.
    • Perform and fill out duties listed on checklists and prep sheets.
    • Maintain sanitary standards before, during, and after service.
    • Determine inventory of food items and requisition from store room.
    • Set up equipment needed for preparation prior to service.
    • Maintain high quality level of food production and presentation.
    • Cleanliness, sanitation and personal hygiene.
    • Responsible for setting up station, breakdown, and all necessary advance prep. work
    • Put all food away that has been requisitioned from storeroom.
    • Prepare all food items according to recipe specifications.
    • Make sure coolers are cleaned, organized and locked after work is finished.
    • Bring to Chefs attention any items that are not fresh.
    • Make sure all food is prepared in order to maintain high standards.
    • Assist in control of food usage.
    • Perform other duties as assigned per Executive or Sous Chefs

    POSITION REQUIREMENTS

    • Friendly and polite team member.
    • Must own a set of knives.
    • Ability to read micros orders.
    • Knowledge of basic prep functions (i.e. cleaning greens, prepping vegetables).
    • Knowledge of equipment and food.
    • Knowledge of proper cooking procedures.
    • Knowledge of proper knife handling and techniques.
    • Knowledge and basic comprehension of the English language.
    • Ability to work under pressure.
    • Ability to various shifts.
    • Ability to stand for long periods.
    • High school diploma or GED preferred.
    • Must join H.E.R.E. Local 122 union.
