**Description**
Duties include, but are not limited to:
Hires and effectively maintains staffing levels for the department.
Responsible for properly training all employees in the performance of his or her job duties.
Evaluates, approves performance evaluations and commensurate wage and salary increases.
Performs disciplinary actions and terminations within the Food and Beverage department.
Consistently establishes and maintains efficient departmental procedures and controls. Ensures adherence to procedures and controls by all departmental employees.
Prepares daily orders to ensure all units are stocked with the appropriate level of product.
Identifies and defines business needs and implements solutions which result in beneficial changes throughout all Food and Beverage areas of the Cimarron Casino Enterprises.
Ensures all specifications in recipe standards are achieved and maintained.
Maintains excellent restaurant and bar hygiene conditions at all times.
Spearheads menu item changes based on product mix reviews and guest feedback.
Implements and manages an effective Food and Beverage plan for the enterprise, working with the General Manager to determine current and future objectives.
Prepares annual budgets, operating forecasts, and other required reports. Coordinates operating budgets with the General Manager and ensures that operations are maintained within budgetary constraints.
Reviews analyses of activities, costs, operations and forecast data, to determine departmental progress toward stated goals and objectives.
Administers all programs, policies and procedures for the Food and Beverage Department.
Ensures compliance with all appropriate Tribal, federal, state and local laws and regulations, as applicable.
Ensures the fair and equitable treatment of all Food and Beverage employees.
Performs other duties as assigned.
