To provide a full range of food services including preparing high volume (non fast food) food in large quantities using standard recipes, assistance in inventory maintenance; compliance with related laws and regulations; and set up and serve food in appropriate portions in a patient tray line, in a cafeteria service line or family style setting; and to perform related duties as assigned.

Prepare meats and vegetables for cooking by peeling, dicing, washing, cutting and grinding by hand and by operating meat grinders, food slicers and mixers.

Prepare salads, cakes, bars, desserts, meats, dressings and jello for consumption by mix and bake ingredients according to recipes ensuring that proper cooking times are followed and that proper amounts of ingredients are used.

Load foods from oven steamer, bowl or mix onto a tray line, cut or separate portions as required for regular and special diets and serve the food directly onto the plates of the residents, patients or employees in various County facilities.

Gather and prepare supplies and foods needed for the next day's meals, remove and thaw meat from the freezer and carry food and supply from the basement; clean and set out utensils, dish and equipment needed for the next day's usage.

Assemble fruits, sandwiches, desserts, jellos and other foods and pack them in bag lunches for the residents, patients or employees in County institutions.

Wash pots and pans, refrigerators, counters, stoves and ovens; sweep and mop floors and carry out garbage.

Serve food and make sure that hot and cold foods are maintained and served at certain temperatures.

Ensure the cleanliness and health standards of the kitchen and all food storage areas.

Order food from approved vendors.

**Education:** Sufficient to perform the duties required.

**Experience:** Three years of full-time experience in high volume (non fast food) food preparation as a Cook, OR three years of full-time experience as a Kitchen Worker in a County institution.

**Substitution;** Degree or certificate in Culinary Arts may substitute for up to two years of the experience requirement.

**Certification/Licensure:** Current ServSafe Certification or the ability to attain Certification within 6 months of employment.

**Preferred Experience:** None.

Exam/Screening Process Information **The examination process will consist of the following section with each section weighted as indicated:**

Training & Experience Rating = 100%

The examination for the Cook will consist of a training and experience rating, comprised of the questions in the attached supplemental questionnaire. Not all applicants who meet the minimum qualifications will pass the training and experience rating. The rating on this supplemental questionnaire will depend your answers to the questions do not mark "see resume" or "see work history" as a response. Please answer all your questions clearly and completely. Failure to respond could affect your score and final rank on this examination.

**Eligible List**: The names of all applicants who filed a properly completed application and passed the examination/screening process shall be placed on the eligible list for an employment opportunity as a Cook. This list will be certified to the appointing authority which may use this list to conduct interviews to fill a vacancy. Candidates will remain on the list for three months or until hired, whichever occurs first. A notice will be sent to applicants at the time the eligible list is posted, informing them that the list has been posted and their rank on the list.
