    Job Description

    The Nutrition Coordinator will work with the Nutrition Associate Manager to provide nutritional guidance to the WKU Restaurant Group, WKU Athletics, and the WKU Campus. This position is responsible for assigned health and wellness programs that support the overall mission of the WKU Restaurant Group and Hilltopper Nutrition. This position will create, design, plan, and support student-centered nutrition, health, and wellness initiatives at Western Kentucky University. This position will work as a team member of the Hilltopper Nutrition staff and support various departments with bringing innovative ideas regarding nutrition to campus. This position reports to the Nutrition Associate Manager.

    Job Responsibilities

  • Conduct one-on-one nutrition consultations with students.
  • Special dietary needs/food allergens ? Enable the student to assume more personal responsibility for their health and to help them make their own determinations about food choices.
  • General students ? Apply MNT knowledge to counsel and educate students on a variety of nutritional needs to help them achieve their goals.
  • Student athletes ? Educate and support student athletes in a performance and fueling focused consultation. Eating disorder experience is preferred.
  • Apply Medical Nutrition Therapy and follow the Nutrition Care Process during consultations.
  • Follow HIPAA and FERPA guidelines throughout the entire nutrition counseling process.
  • Work with student accessibility/disability services and campus health services for proper student registration and medical documentation as it pertains to meal plan exemptions and accommodations.
  • Provide individual tours to students and parents to familiarize them with dining locations and to identify options related to their specific condition.
  • Create, design, plan, and support health and wellness initiatives, programs, and services for WKU students.
  • Spread nutrition education and awareness through educational tabling events, cooking demos, lecture presentations, health fairs, and other on-campus programming.
  • Partner with student groups and campus organizations or departments, such as WKU Athletics and Campus Recreation & Wellness, in planning and executing health and wellness events.
  • Participate in campus and social media marketing in order to provide nutrition information and engage the student population.
  • Stay current and up-to-date on dining, nutrition and sustainability practices and trends.
  • Serve as preceptor for dietetic internship and undergraduate practicum programs.

    Qualifications

    Required Qualifications

  • Must have a Bachelor?s degree from a 4-year college or university in Dietetics/Nutrition/Health Sciences or another related major.
  • Must have completed a supervised practice internship program that has been accredited by the Accreditation Council for Education in Nutrition and Dietetics (ACEND) of the Academy of Nutrition & Dietetics.
  • Must have the Registered Dietitian Nutritionist (RDN) credential with the Commission on Dietetic Registration through the Academy of Nutrition & Dietetics and must be licensed in the state of Kentucky.
  • Must maintain registration status through the Commission on Dietetic Registration, Licensure through the state board, and continuing education requirements.
    Preferred Qualifications

  • 1+ year experience as a dietitian
  • Prior experience working in higher education
  • Prior experience with nutrition counseling and supporting behavior change in nutritional habits
  • Leadership ability, prior experience managing staff
  • Food safety knowledge and/or ServSafe certification
  • Marketing and/or foodservice experience desirable
