POSITION SUMMARY

JOB DESCRIPTION: Responsible for providing the highest quality food products for all guests and employees at the Leech Lake Deli

ESSENTIAL FUNCTIONS

RESPONSIBILITIES:

1. Creates a variety of main course, starch, vegetable, saut and desert items independently or through menu and recipe interpretation.
2. Demonstrates knowledge of all menu items, cooking procedures and handling of all food products.
3. Responsible for following recipes, cooking times and temperatures according to the guidelines set by management.
4. Consistently practice all procedures for food storage, rotation, spoilage, sanitation and the prevention of cross-contamination
5. Delivers exceptional internal and external guest service standards.
6. Learns and understands menu and food preparation.
7. Meets or exceeds kitchen sanitation standards
8. Trains new employees in food preparation, food storage, sanitation and the prevention of cross-contamination.
9. Cleans and maintains all equipment used in the deli.
10. Maintains knowledge of all events in the property as a whole.
11. Attends and/or facilitates all mandatory meetings and training.
12. Maintains confidentiality at all times.
13. Is sensitive to Native American Culture.
14. Operates within the parameters of the Leech Lake Gaming Human Resource Policy, Departmental Policy Manual and all Tribal Internal Controls (TICs), and all other applicable regulations.
15. Secures the assets of Leech Lake Gaming and the Leech Lake Band of Ojibwe.
16. Performs other duties as assigned.

Position Requirements

KNOWLEDGE, SKILLS, AND ABILITIES:

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.

POSITION REQUIREMENTS:

1. Possess knowledge of food quality standards and understanding of service and atmosphere as they relate to the line cook position.
2. Ability to work independently.
3. Must be dependable and reliable.
4. Working knowledge of food service equipment and utensils.
5. Knowledge of federal and state sanitation guidelines.

PHYSICAL REQUIREMENTS:

1. Physically capable of remaining on feet for long periods of time.
2. Subject to internal working conditions.
3. Must be able to lift up to 50 lbs.

EDUCATION AND SKILLS

Education Required: High School Diploma or General Education Equivalency (GED), ServSafe Certification.

Education Preferred: Culinary coursework
Experience: Minimum of two years of quantity buffet cooking or full service dining experience required.

Computer Skills: Minimal computer skills required

Certificates & Licenses: Must meet Tribal/State compact licensing requirements, pass criminal background check and submit to drug testing.
